Notes: Added two tabs NaMBS to strike water not shown in water chemistry. Pulled decoction to a side kettle a few minutes after full mash reached 160*. Pitched 3 packs WLP833 for 500-600b cells and one pack S189 for extra attenuative properties. BF projects a final gravity if 3.1P, but this beer usually finishes at 1.016 to 1.020.
No Sparge, full volume mash with recirculation during mashout.
Jan-2023 batch: 2023 Indiana Brewers Cup - Bronze (19 Entries). My doppelbock with a very similar grist/process won gold.

but after mash out drop kettle temperature to 45 degrees and with a Ph reader check your Ph (should be at 4.8-5.0) if its higher use some 88% Lactic acid (sparingly) to drop your Ph.
Boil for 15 minutes to clean any unwanted bacteria that may compete with Lactobacillus.
Cool to room temperature
pitch your lactobacillus (5335) cover with cling film and leave it. check it every 4 or so hours and do a Ph reading. You ideally want 3.3 to 3.6 but also depends on individual pallet.
once pH level is right bring to a boil for 60 minutes and continue like normal
once primary fermentation is finished rack onto frozen Passion fruit*
and let sit for 8-10 days. |

*** NOTE ***
Since the sugar isn't calculated into the wort gravity, the published ABV is off. With the sugar calculated in, we expect 9.75% ABV. Adding the sugar to fermentation rather the boil will help fully attenuate the beer. |
