This beer is all about execution—yeast pitch rate, fermentation temperature, and water profile will play a large role. Try to follow the water profile of a yellow dry beer (under 6 SRM). As for fermentation temperature-you can either ferment this at 50 degrees for 2 weeks with a 3-4 day diacetyl rest or if you have the ability to use a spunding valve you can ferment at 60 degrees.
-If using a spunding valve, I ferment under 6 PSI and then raise pressure to also carbonate during the end of fermentation. Once fermentation is complete, lager at 34-35 degrees for 6-8 weeks. |

Notes: Smoke malted and unmalted grain with oak chips for about 1 hour in an enclosed container (use aluminum foil over grain to trap smoke). (Don't use toasted oak -- may not smoke as well as untoasted).
Ferment cool with K-97 (60F). No dry hopping. Carbonated to 3 volumes CO2 in a keg. If bottling, use strong (Belgian or Champagne style) bottles.

Notes: Add 4 mL Hop Shots and D-180 syrup at 60 and 15 min. (One each).
Ferment at 68F for first 2-3 days and then raise to 72F.

Gravity was quite a bit low after not cold crashing 2L starter, so 1 lb of DME boiled and added. Tilt shows that after primary ferm kicked off it mixed in appropriately.
UPDATE (22-Feb-19):

Added remainder of CBC-1 packet (maybe 2/3 full?) to fermenter. Due to massive blow off during first few days, it looks like a lot of yeast was lost. Fermentation had stalled around 1.030, temp was dropped down to 68F.

Still slowly chugging along, down to around 1.015 now, let it continue to finish before racking to a corny keg and naturally conditioning with sugar.
