add puree's to fermenter on day 7. let sit 5-7 days then cold crash.

Notes: Heat water but do not boil. Remove from heat and stir in honey and yeast nutrient. Rack to fermentor and pitch yeast.
Allow to sit in primary for at least three months. Then rack to secondary on top of fruit (preferably frozen) and allow to age until desired flavor is reached.

On the nose, clove and nutmeg, cafe au lait, subtle dark fruit notes, and hints of candied lemon peel. On the palate, smooth & fruity espresso, milk chocolate, and warm brandy-soaked currants are in the middle of a high-class dance-off against the spicy and peppery Belgian character. The overall impression evokes malt loaf or ginger cake. For the traditional cellering, age this beer in vessel or bottle for 2 - 3 months at cellar temperature.

Notes: The main beer is being made without the carafa. Double batch brew day, then I'll steep the carafa grains on their own, boil that liquor and add at flameout to one of the two batches. I am going to ferment in kegs, but this time I'm going to transfer both beers instead of brighting in the keg.
If I do one gallon for the carafa part, I should get about a 1.028 gravity out of that, so that with 3.5 gallons of main beer @ 1.056 into a keg fermentation vessel should come out to 1.049 or so. Also add a 1/2 oz of hops for a 15 minute boil of that schwarz part to get the IBU a bit higher on the on that half. |
