If you prefer to use liquid yeast, Wyeast 1056 American Ale or White Labs WLP001 California Ale are excellent choices
Add 500mg potassium metabisulphite to 20 gallons water to remove chlorine / chloramine (if required).
Water treated with brewing salts to: Ca=110, Mg=18, Na=16, Cl=50, SO4=275 (Basically Randy Mosher's ideal Pale Ale numbers with slightly less Sulphate). For complete details on how to adjust your water, refer to our step by step Water Adjustment guide.
1.5 qt/lb mash thickness.
Single infusion mash at 150F for 90 mins.
Raise to 168F mashout temperature and hold for 10 mins.
~90 min fly sparge with ~5.6-5.8 pH water (measured at mash temperature). Collect 14.9 gallons.
Convoluted counterflow chiller
BUY NOWBoil for 90 minutes, adding Whirlfloc and hops per schedule. Lid on at flameout, start chilling immediately.
Cool the wort quickly to 66F (we use a one-pass convoluted counterflow chiller to quickly lock in hop flavour and aroma) and transfer to fermenter.
Aerate well. Pure oxygen from a tank may be used at a rate of 1 litre per minute for 60 seconds.
Pitch yeast and ferment at 66-68F (wort temperature). We use modified stainless fermenting buckets in wine fridges.
Add dry hops once fermentation is nearing completion (i.e. 5 points from terminal gravity). Dry hop for 5-7 days total. |

add lime at kegging/carbonation. (18 grams/1 pack in each keg) - after brewing this several times, 18g of the crystallized lime is HEAVY. It’s drinkable if you love lime. But moving forward, probably only adding 9-10 grams per 5 gallon brew.
mash for 90, boil for 75.
I’ve brewed this beer twice, so far. First as a 5 gal, then a 10.
In the first brew, the yeast stalled, I think I under-pitched, so the abv was way low.
In the second, 10 gallon brew, there was clear channeling in the mash tun around the sides, and the OG was lower than expected.
Third time is a charm! - Third brew went very well, no channeling, crystal clear lautering, good mash efficiency (91%). Healthy starter, expect good fermentation.
This third iteration of brew was entered in a brewery competition in Lexington VA - Heliotrope Brewery, and took SECOND place. (Fall 2024).
Made a few updates for annual brew #4, updated 2 row to 6 row malt, added carapils. Also, subbed out some hop varieties. Liberty, for bittering, for obvious reasons, and some Citra at flameout to hope for more depth in the citrus (lime) flavor. Adjusted to try to hit around 4.5% abv, 17.5 IBU. |

Add 2 oz. Czech Saaz and boil the wort for 60 minutes.
With 10 Minutes left in the boil, add 16 oz of lactose and 16 oz of almond meal.
With 5 Minutes left, add 1 oz. Serling and continue to boil for 5 minutes.
Pitch rate of 1Mil cells/ml/*P.
Begin the fermentation at 68° F (18° C) and allow it to warm up slowly to 70° F (27° C) over the duration of one week.
"Dry Hop" 5 Days before bottling while in secondary:
5 oz. Earl Gray Tea (loose leaves found at Walmart)
~1 lbs toasted almonds (or approx. 2.5 mL of almond extract to taste at kegging)
2.4 volumes of CO2 target.

90% 2 Row, 10% Rolled Oats by extract for malt bill. Add approx 1/3 lbs. per gallon of toasted almond meal to mash. 150 Mash Temp. |

heat 3.5 gallons on stove to 180 - transfer to Igloo cooler before mash
boil strike
3 gal to 162 add grain and stir for no dough balls
set temp to 152 1 hour
Stir grain every 15 min
drain mash by lifting ss bucket in brewer's edge
add cold water til sparge is 170 f to 5 gallon cooler
once 1 gallon collected, collect 1qt or 2 and pour slowly on grain bed.
Sparse by slowly dumping 1qt back on mash
boil 1 hour add hop as scheduled using a hop bag
measured 1.052 @60f 78% eff
add dry hops to fermenter and let cool overnight to ~70f
when cooled to 70F pitch yeast rack after 3 days
Rack to 5 gallon carboy after fermenting slow for 7 to 10 days
when clear and and no fermentation.
transfer bottling bucket. dissolve 5 oz of corn sugar into 16 oz of water. mix in and bottle
feel free to use 1# crystal 10 if you cant get 1 # Munich for 9 # max grain. adjust as need to hit efficiency
Updated had to add 1/4 gallon at rack so i failed to collect enough at sparge. efficiency suffered to 73% when i account for the 1/4 gallon added to secondary

Notes: As you may have noticed, these days haze is all the craze in the IPA world. After many, many test batches we are
proud to present our version of this juicy style - Fruit Bazooka NE IPA. Only mildly bitter, the hop charges in this recipe
create a blast of in-your-face flavors ranging from ripe mango, orchard fruits, melon, lime and passion fruit to subtle
pine and floral notes. Fruit Bazooka is perfectly hazy thanks to the use of flaked oats, wheat malt, massive dry hopping
and a relatively non-flocculant yeast strain. The name itself was suggested by a homebrewer who witnessed
our first tasting notes, and as it implies, this beer is bursting with an intense payload of citrus and tropical fruitiness. |
