Notes: Mash and then add lactobacillus to kettle after mash.
Kettle soured to pH of 3.4 after 48 hours - probably will go longer on next brew.
After kettle souring, boil adding hops and add marshmallows at end of boil.
Primary fermentation for 7 days, transfer to secondary and after 7 days in secondary add fruit puree. Secondary fermentation for an additional 21 days.
Continues to improve in bottle. Nice tart sour with balanced flavors.
I tried adding artificial marshmallow flavor to a few bottles at bottling and several tasters found the bottles without the artificial flavor to be preferable and actually have more marshmallow flavor. |

Mashed in with 4 gallons of 166 degree water, held mash at 154 for 60 minutes. Added 5.7 quarts of boiling water to raise temp to 168, held for 10 minutes. Added 6.3 quarts of 176 degree water to raise temp to 170 to mash out.
Ran off about 6.75 gallons of wort after giving bag a couple of light squeezes. Pre boil gravity of 1.046
75 minute boil, finished with about 5.25 gallons. Actual OG 1.056

- Started recirc pump after 1st 45 minutes at the 152 degree mark
- Boiled for 60 min, then started hop schedule
Added 3lb frozen mango's after 1st fermentation mostly done. Prep, make a puree with 1cup of h2o hold at 180degrees for 30 min, cool to 70 and add to fermenter

Reading = 8 @ 70deg converts to 1.0148. Likely done but this is where I added the 3 lbs of pureed frozen mango's. I pureed with a little water and heated to 180deg in a pan. held it there for 10min. Cooled to 75 and added to wort

ACTUAL ABV 1.063-1.014 = 6.43%
- So far people love it. They say the mango cuts the bite of wheat but doesn't taste fruity. A few said it tasted like hoegarten.
