I got box of six Muntons Barley Wine 1.5kg kits for really cheap so I'm going to see what I can do with them. Since they were so cheap I figure I can experiment with them.
Don't let the OG stated on the can fool you. The stated OG is after you add 40% sugar so the cans don't have as much sugar as it sounds. I calculated about 26.6 PPG but I'm probably wrong.
They come pre hopped to about 30 IBU/1.5kg/13l but the hops are a mystery. I've added six kits so I guess the IBU is 90 but who knows if it works that way.

I don't want to tie up my main fermentor because it might take a while to ferment and age so I'm using 25l container. I haven't made a batch this big before so not sure if I'll scale it right.
I also chucked in a packet of S-04 yeast because I thought the OG was going to be crazy when I stuffed up the PPG calculation and I was worried that the 1028 couldn't have done it on its own and s-04 is a similar(ish) yeast. If you make this recipe and only put two cans in originally, one 1028 pack would be fine I reckon.

Notes: Belgian Trappist Triple infused with old world spices to match the flavors pronounced by the Abby yeast. A little less spicy and earthy hops than a typical Belgian Triple. Delicate complex floral aromas of passion fruit, grapefruit, pineapple, gooseberry, lemongrass, and white wine. Medium-light malty character and big ABV.
Freshly grind peppercorns, allspice, and coriander during the last ten minutes of mash downtime.
Candi sugar is added 30 minutes into the boil. Add to the hop spider to reduce the risk of burning sugar on the bottom of the boil kettle.
Once primary fermentation is complete, dissolve 4oz of table sugar into 8oz of warm distilled bottled water and pitch the mixture into a sterile container (a bucket is fine). Rack the beer into the container with the priming sugar and bottle into 16oz fliptop bottles. Alternatively use fizz drops in each 16oz bottle, skip the process of making priming sugar syrup, and rack directly into bottles. Keep dark and ferment at 66 degrees for 18 days.
Bottle condition in darkness at cellar temperature 53-55f for 6-8 weeks. |

A Double IPA with cloudberries added to the conditioning tank. One thing is certain – this Swedish inspired Double IPA is not as innocent as she first appears. A seductive body of rich malts and a buxom amount of Citra, Nelson Sauvin and Bramling Cross hops have been added to fresh Scandinavian cloudberries to deliver this beer’s tart finish. Add the cloudberries to your beer when racking the beer after primary fermentation. Grind them into a paste to allow maximum flavour extraction.

Notes: Update 1/1/19 : changed grain bill slightly as I only had 9.25 lb 2 row on hand , will make up for it with dme. Also just realized I've probably been using too little water. Usually 1:1. Using more water this time. Recommended 1.25 to 1.5 so I'm in with 1.34. Hopefully I can fit that...
update 12/7/18 : modified original "rain delay" recipe for this one, adding oats for body and more malt to boost up to hopefully around 8%. should be noted that rain delay came out more like a stout than a porter. now we will officially call it stout.
bumping up hop additions to better match the malt bill changes. swapping out for warrior on bittering hops so i dont end up with leftover northern brewer. could age some on bourbon oak.

Oxygenate slowly through 0.05 micron diffusion for 90seconds(we’re after 9-10 ppm O2).
Ramp primary from 18C to 24C through 7days.
At 1.013rack off primary yeast to secondary and coolto13C.
Hold for 5days+until the FG of 1.012 is reached.
Dump yeast a second time, lower temp to 4C and hold for 6weeks. Bottle using heavy Belgian bottles or Champagne bottles.
Prime with 31g/gal SimplicityCandi Syrup and re-pitch 350mlWestmallestir-plate.
Bottle re-ferment for 14 days at 74F.Cellar for 12months. |

Skulle gissa på att ölen blir torrare än förväntat pga lägre mäsktemperatur.
Bra utrseende, väldigt gul och grumlig.
Bra mouthfeel, väldigt len och fyllig.
Smakade och luktade dock bara grönsaker.
Nästa gång: Fucka inte upp mäskningen och försök antingen få bort humlepartiklar efter whirlpool och/eller cryohops/hopshot. |
