Notes: First run at an APA...
The 2 first days of fermentation were @ 13 deg C
(a bit too low... but it was bubbling steadily after 12 hours) I will try to warm up the wort but keep it on the low side for experience sake!
2 weeks in primary + 1 week DH
Test 2 weeks after bottling: still a "sweet" beer well balanced by bittering hops. Aroma is really good and flavour to my taste.

Notes: Mill the grains and mix with 4.2 gallons of water to reach a mash temperature of 154 degrees and hold for 60 minutes.
Vorlauf and then sparge with 2.7 gallons and top up to reach 6 gallons of wort.
Boil for 60 minutes and then chill to 63 degrees and pitch the yeast. Ferment at 64 degrees and ferment to 1.018 final gravity.
Two weeks in the fermenter and then keg. My usual way! |

| Notes: Cold steeped the pale chocolate malt overnight. Pitched half a pack of mangrove jack hefe yeast 2 65 and let it free rise at ambient temps of 70. Came out great. |
