Notes: Take the worth to a boil, then cool between 20 and 45 Celcius. Transfer worth into a topped kettle, add probiotic capsules.
To reduce risk of infection, cover with plastic wrap, do not aerate (lactobacillus plantarum works fine without oxygen). Keep temperature below 45 to allow growth, but not too low to risk infection. The fastest temperature appears to be around 30C.
Add 1 billion cells per liter for a 36-hour souring, or 0.5 billion cells per liter for a 72-hour souring. For this 20L recipe, that's 20 billion cells, or 4 capsules, for a 36-hour souring. Half for the 72-hour souring. Expect good results at 30 Celcius for 36 hours.
The proceed as usual: boil, hops, chill and transfer to fermenter with the yeast.
Ferment 10 days, then add raspberries. Bottle or keg 7 days later.
The desired probiotic contains Lactobacillus plantarum. The suggestion below contains 5 billion cells per capsule.

We’ll mash high, around 155. No hops in the kettle.
We have a house lacto culture that we use to ferment in the tank and I imagine this beer will finish around 1.004. I was thinking of dry hopping at around 1# per barrel (2/3 Amarillo, 1/3 Mandarina).

Notes: (Night Before Brew day)Prepare Spices and place them in a fine mesh bag. Prepare Pumpkin: Spread puree into a large baking dish. Roast at 400 degrees F (204 C)for about an hour, stirring every 15 minutes, until fairly dry and caramelized but not burned. Put in a fine mesh bag.Cool cover and refrigerate until brew day. On brew day remove from refrigerator and bring to room temp before using.
Brew Day: Bring 6 gal(23L)water up to 158 degrees(70C)Place Pumpkin (still in mesh bag) and the CaraVienne, brown, and chocolate malts in another mesh bag, and steep in hot water for 30 minutes. Remove the mesh bags,(do not throw away) then turn off heat. Add the liquid Malt extract and stir thoroughly to dissolve extract completely, making sure not to burn it. Put the pumpkin mesh bag back in, turn the heat back on and bring to a boil. Once boiling , remove the pumpkin, allowing liquid to drip back into the kettle. Boil the wort for 60 minutes, adding the hops, sugar and molasses at the times indicated in the recipe. |
