Notes: "Pandan leaves have a naturally sweet taste and soft aroma. Its flavor is strong, described as grassy with hints of rose, almond, and vanilla, verging on coconut. Their intense green color and it is also used as a natural food coloring."
My goal is to make a tropical NEIPA. I'd like think the lactose will give mouthfeel that will go well with Pandan.
Pandan is the main reason I was making the beer. My buddy thought he tasted it in a beer but it wasn't an ingredient. I looked into and a brewery in Hawaii(Beer Lab Hawaii) does them often and gets great green color. |

Notes: Based loosely on the delightfully awesome recipe of mine "Bitter Brown Bat". Adjusted to suit whim, and for available ingredients. Bitter Brown Bat turned out to be not very bitter, at least not for my taste. So I'm taking the IBU calculations in this recipe builder with a grain of salt.
Came in under gravity (1.064 instead of 1.069) but over volume, so that's OK .. more beer, not as strong. Last minute discovery of bad inventory resulted in using 2oz Nelson Sauvin hops at flame-out instead of Glacier. Smells divine. Not "black" rather .. dark brown more like, as I wimped out on the 1 full lb of roasted barley. I think I made a mistake there. The taste is well within "normal". |

brewed last night. overshot target OG of 1065 and 5.5 gallons with 1.080 and approx 5.0 gallons for 75% efficiency. This was another long mash - about 2 hours and just recently dialed in the recirculating. may need to water it down a tiny bit? already pitched.
Also I forgot to add the 1oz hallertau flameout hops.
hopefully yeast will be ok. i had a 2nd gen slurry of 34/70 i pitched 2/3 of the jar plus one fresh pack.

Revising recipe for 2022. Adding water chem adjustments from tap - will be a little high on Na. Using magnum instead of warrior. Brewing on G40 adjusting volumes and efficiencies accordingly.

initial recipe formulation!
taking notes from https://beerandbrewing.com/make-your-best-maibock/ although the author seems to have a non traditional approach to the style.
i like the malt bill he suggests pilsner, low on the munich, and maris otter. "brings doughy bready note without being heavy" he also is advocating for this beer to truly be maibock that its a lighter version of bock. too heavy of a grain bill and body and you might as well just have bock.
browsing around byo and other places the malt bill for this varies a lot. some use crystal, some use wheat, some use vienna.
doing straight hallertau. a little bit more hops than some recipes but ibu falls into expected range. using warrior for bittering since hallertau is so low AA.
going with tap water. my current theory is that malty beers (like my oktoberfest and festbier) come out great with henrico tap.
consider doing 10gallons? might be too big a beer tho |
