Notes:
Tart Brett Quad with raisins and aged on Pappy bourbon soaked oak with sour cherries.
Chill wort to 100 F.
Pre acidify wort using lactic acid to PH: 4.0.
Pitch 500 ml l.brevis culture starter and blanket wort with C02 for 2-3 days until a PH of 3.4 is achieved.
Boil wort and add hops as indicated.
Chill to 70F and pitch 2000 ml Brett Starter.
Ferment for two weeks or until a stable final gravity is reached.
Transfer to secondary over sour cherries. Adding oak until desired flavor profile is achieved.
Transfer to keg under pressure and age for 4 months.

Notes: Prepare 2 litres of BIAB pilsner wort:
1. Infuse 0.5kg (not in the grain bill) of the pilsner malt in 1.5 litres of 75C water.
2. Stir and set in 68C oven for one hour.
3. Warm up 1.3 litres of water to 75C and use it for sparging.
4. Combine the worts in one kettle and boil for 10-20 minutes.
5. Fill up a 2 litre erlenmeyer with the wort as full as you can.
6. Let to cool down to 50C and throw in a generous handful of uncrushed grains.
7. Keep in 40-50C for three to five days.
8. Boil the soured wort and store in a fridge until brew day. |

Notes: Use Orange Blossom Honey. Orange Rind is to add to the zest of the orange flavor -- let it sit in secondary for a very short time. Ultimate replacement is Bergamot Oranges used in perfumery.
Oranges: Zest on the colorful orange portion of the rind. Lightly crush the zest with a knife, or place into a small bag and into the freezer for 24 hours. Toss the zest into a sterilized container with grain alcohol. Let sit for 5 days, and then toss the entirety of the container into the racked beer. Best if tossed into beer at bottling for best flavor longevity.
Rack for clarity and flavor for 6 months. |
