Rogue Ales Shakespeare Stout clone
(5 gallons/19 L, all-grain)
OG = 1.061 (15 °P) FG = 1.015 (3.8 °P)
IBU = 76 SRM = 48 ABV = 6.1%
Rogue’s Shakespeare Stout is a classic example of the style. Rogue describes it as, “Ebony in color with a rich creamy head, earthy flavor and a mellow, chocolate finish.”
Ingredients
9.12 lb. (4.14 kg) Great Western domestic pale malt (2 °L) (or similar)
1.45 lb. (660 g) Briess chocolate malt (350 °L) (or similar)
1.45 lb. (660 g) Great Western crystal malt (150 °L) (or similar)
1.34 lb. (610 g) Great Western flaked oats (2 °L) (or similar)
3.17 oz. (90 g) Briess black barley (500 °L) (or similar)
14.4 AAU Cascade pellet hops (60 min.) (2.25 oz./64 g of 6.4% alpha acids)
7.2 AAU Cascade pellet hops (15 min.) (1.13 oz./32 g of 6.4% alpha acids)
Wyeast 1764 (Rogue Pacman) yeast
Step by step
Mill the grains and dough-in. Hold the mash at 148 °F (64 °C) until enzymatic conversion is complete. Infuse the mash with near boiling water while stirring or with a recirculating mash system raise the temperature to mash out at 168 °F (76 °C). Sparge with 170 °F (77 °C) water, collecting wort until the pre-boil kettle volume is around 6.5 gallons (25 L) and the gravity is 1.047 (11.7 °P).
The total wort boil time is 90 minutes. Add the hops according to the ingredients list. Chill the wort to 60 °F (16 °C) and aerate thoroughly. The proper pitch rate is two packages of liquid yeast or one package of liquid yeast in a 2-liter starter.
Pacman ferments well at cold temperatures, but you can let it warm a little as fermentation progresses to ensure complete attenuation. Pitch at 60 °F (16 °C) and ferment until the yeast drops clear. Allow the lees to settle and the brew to mature without pressure for another two days after fermentation appears finished. Rack to a keg or bottle. Target a carbonation level of 2.5 volumes.

STARTER
(calc'ed using brewers friend yeast pitch rate and starter calculator)
Make about 1week before hand.
4 liter starter;
STEP 1: 13.5 oz DME light
boil 4L of water
add DME and stir to dissolve
boil 15 min
cool to 70F
sanitize yeast starter vessel and lid, funnel, scissors, yeast pack etc
pour wort into starter vessel
cover tightly and shake vigorously
add yeast
shake
loosen top so it's not air tight
shake intermittently and leave on table for 24-36 hours
cold crash 24 hrs
decant
STEP 2: use 13.5 oz DME light
boil 3.5+L of water (I'm limited to a 1 gallon starter vessel)
add DME and stir to dissolve
boil 15 min
cool to 70F
add to starter
stir/shake
leave for 24-36 hours
cold crash
decant before pitching into beer
BIAB Method:
MASH
strike temp 162F with 4.5 gallons water
Mash all loose grains for 60-90 min at 150F
Sparge wtih 2.5 gallons at 170F.
Mash and sparge water should amount to about 6.5 gal for the boil
BREWING:
1. Add Northern Brewer hops at 60.
2. Add Golding hops at 45.
3. After fermentation starts, transfer primary to chiller for 7 days at 68F.
4. Meanwhile, add vanilla beans, oak chips, and bourbon to sanitized bowl with lid and let steep in the fridge for the duration of primary fermentation.
5. On day 8, transfer to secondary and add the contents of the bourbon bowl (liquid and all) to secondary fermenter for 21 days at 68F.
6. Bottle or keg, condition for 21 days.

Actual pre boil gravity: 1.068
Had 5 gal post boil so a little lower than expected. Moving kettle I accidentally hit the valve open and lost about 0.25 gallons. I added 0.5 gallons to top off, which would have taken the original to the 5.5 gal mark, actual was 5.25 gal.
Post boil gravity before adding water: 1.076
Post boil gravity post adding water: 1.084
Yeah I don’t get it either. Prob picking up sediment
FG 1.015. That gives this beer about 9% abv. |

Notes: Note to future self: Ground malt to midway between the 0.05 and 0.025 settings (so 0.0375?), and ended up too fine and it didn't drain well from the mash tun.

Otherwise, very normal brew until the end of the mash at which point I covered a baking sheet in spent grain (this was only a small portion of the overall grain), and baked it. Since the wort wasn't draining well from the mash tun, I spent a long time trying to stir the wort out of the mash, and scooping it out and pressing it through strainers. I think it was about an hour before I could get about 6G from the mash tun and began the boil. I boiled it for about 20 minutes before adding my bittering hops, then 15 minutes and added my immersion cooler, then another 15 minutes and then added my flavour hops before starting to cool the wort.
I only cooled the wort down to about 60 or 70C, at which point I put it back into the mash tun (with most of the grain removed), then I dumped in the baked grain to soak for 30 minutes to an hour before draining again (this time much easier since there was very little grain) into a bucket where I pitched my kveik and went to bed.
About 5 hours later I got up and saw that the kveik wasn't doing anything, so I pitched another pack of kveik I had and waited 4 more hours, before finally giving up and pitching a pack of dry US-05 which grew a krausen within minutes.
To be fair, the packs of kveik I had were pretty old. If this brew turns out even moderately well, I'll want to try it again with kveik.
After the gravity dropped by about 30 points (about 12 hours after I pitched the US-05, 21 hours total from transferring to the open bucket), I transferred to a glass carboy.

Within about 16 more hours (37 hours total), it had gone from 1.073 to 1.016. It stayed at about 30C pretty much the entire time, which is well above US-05's temperature max recommended temp of 25. It's been about a week since I made this, and I'm planning to wait another week before bottling.
Note that about a week after brewing, it looked like it was stable at 1.015, but then I accidentally jostled the carboy a bit and the SG dropped to 1.011. My best guess is that the floating hydrometer was pressed up against the side of the carboy, so it wasn't giving a valid reading until I jostled it.
