wlp 300 was unavailable and purveyor substituted wlp 380
we decided to underpitch the 380 and ferment on the warmer side in order to increase the isoamyl acetate esters per the experience below:

Bought this cause my local store was out of WLP300 strain. But as I wanted the 300's banana flavour I used one vial for 40 liters. No starter, no aeration, 25 °C...BOOOOM banana all over the place. In my mind even more than you get with WLP300. On the other hand attenuation went down but that's a price I'm willing to pay. Aroma is less fruity and more spicy. Besides banana there's also hinds of clove and citrus in the flavour (might be the Saphir hops though) plus a very nice acidity.

Mikeller uses:
Water, malt, roasted barley, flaked oats, dark cassanade, honey, hops, coffee, vanilla and ale yeast.
consider using a fan to drive off as much vapors as possible
hops added at 1.088
so it might be 110 IBU.
After brewing: multiple concentrated wort additions after 2 days of fermentation, together with brown sugar (cassanade) and a few coffee beans. |

note My usual process: wirlpool at 0 until temp reaches 170 then chill, cold crash after at least 10 days of fermentation, it goes 60 for 5 days 65 for 3 days then raising to room temp the last 2 days, then pull off into a keg to cold crash at 33 for 7 days while carbing and also using gelatin, at this point you can pull out into another keg for clear great tasting beer or if you have a cut dip tube just drink and throw out the first 2 glasses of sludge |

Notes: Lower Protein rest should result in lower head retention. This is planned as it will be highly carbed and may have problems pouring with high head retention.
Higher mash temps to give it a bigger body to balance out the acidity of the blueberries. You can alter the temps to fit the blueberries you can get.
The higher carbonation gave it an almost champagne-like feeling. Very spritzy and delicious. |
