Notes: Whirlpool: Begin recirculation through sanitized heat-x. Add hops when T=180F and start timer. Continue to recirc through through heat-x until T~130F (depending on ambient temp), then valve out heat-x and continue recirc until 30 minutes is up. Try to end whirlpool @108F.
Day 1 – S04/T58/WB06:92%/5%/3% – pitch all at temp 78º. Ferment 24hrs @ 74ºF
Day 2 – reduce temperature to 64º
Day 8 – raise temp to 70* and dry hop
Day 10 – cold crash for 2 days and keg or bottle
Water absorption 0.5qt/lb grain = 2.7gal absorbed
Pre-Boil Gravity: Target 1.061 gravity, about 9.7 gallons
Boil-off: Plan for 1.5gal, add water/DME if necessary

Notes: On 05/27: I changed the recipe to reflect that Russian River lowered the ABV by around 2%.
I will mash in at 148 for high fermentability. I will add "the Funky Bunch", which I cultured from a bottle of Beatification after it ferments down to 1.015 to 20. This beer is just slightly sour, I dont want to make a lacto bomb

The RRBC house culture we call the “Funky Bunch” could be cultured from a bottle of Beatification.
You’ll see a long lag phase at the start of fermentation and then a slowing of fermentation when it gets to 1.020, from there it has to sit for a couple of months before it gets down to the gravity listed above. Depending on if you bottle or not you will need to make a decision on the final gravity. If you do bottle it has to be bottled at 1.010 or so, but, not above that or the bottles will over carbonate and the bottles might explode. |

Notes: In hope of the grains I had laying around had not gone bad this was a a last ditch effort to use all the grains and experiment flavor wise with a smoked beer, hope fully this has a nice full body which carries into a smokey after taste similar to that of a scotch.
Ill have to get back to you guys on the taste when its finished.
Please note: I did not use liquid smoke in this recipe, the grains were placed in a smoker at 70 degrees and let sit in the smoker for about an hour. The woods used in the smoker were cherry and white ash with the ember bed being ceder slats. |

Notes: I'm going for a simple, light, dry, clean beer thats easy to drink. I've had a lot of heavier beers and IPA's lately and I want something that's easy to drink. I would do a lager but i don't think I want to wait that long. It's also starting to feel like fall outside so I want to bump the ABV up from the amber and pale ale I made earlier. I'm looking to hit about 6% ABV which should also help the beer keep a little longer as well. The amber started to lose it's fresh taste around 2.5-3 months.
FG was 1.012
The final product had a off note that tasted sterile or band aid like. I think it came from the white sugar which is white because it has been bleached white. The chlorine content caused the phenolic off flavor. So use better sugar next! |
