Notes: FATHEADS SON OF BREWZILLA 2017 (Bronze - Altbiers & Weissbiers):
35.5/50
AROMA (9/12): Chocolate, plum, and vanilla notes. Some light banana notes. Very complex and inviting. No hops, diacetyl, DMS or acetaldehyde; Moderate plum, raisin, and fig aromas from the malt combined with low banana & clove yeast aroma to create a complex & inviting aroma. Hop aroma is absent. No off aromas noted.
APPEARANCE (2.5/3): Dark brown with medium tan head. Creamy with great retention, moderate haze; This beer pours a deep copper, nearly mahogany with a huge mousse light tan head which lasts forever. Very hazy which is ok for the style
FLAVOR (13.5/20): Nice (maybe too high?) chocolatey up front. Moderate wheat bread. Low but balanced banana/clove. More vanilla than clove. Quite complex. Nice dry clean finish; Banana & clove are moderate, a bit more prominent than in the aroma. Dark fruit & deep tastiness from malts are medium-high, but carry a solvent alcohol note with them. Hop flavor is absent and bitterness is low, yielding a sweet impression in the finish which is slightly dry. Balance is firmly malty
MOUTHFEEL (3.5/5): Heavy body with foamy carbonation. Moderate warming. Noticeable but low alcohol bite. Finishes dry; Body is medium with high carbonation. Creaminess is very slight - could be more. Warmth is low despite obvious alcohol content. No astringency
OVERALL IMPRESSION (7/10): Excellent dark version of style. A bit heavy on chocolate. Stronger yeast flavors would increase the score (banana & clove). Alcohol could be a little better hidden. Try fermenting a little lower. Overall very complex and enjoyable; Very nice beer. Rich & malty with an ester profile that gives it a wonderful complexity. There's a definite solventy note with flavor though, which is obviously from yeast stress. Use a starter, oxygenate, and pitch at least 0.75 million cells/*P/ml wort for a beer this big
MY THOUGHTS: Pitch 1 mil/*P/ml wort at 62*, don't seal lid. Let rise to 68 after a day, and let finish at 72* after 3 days. Eliminate brown malt and increase Chocolate wheat to .75 lb |

Notes: Add Lactose and Brew Tan B with ~5 min boil left.
Whirlpool at 170F.
Puree pineapple chunks, strain and heat at ~170 F for 5-10 min prior to adding to fermenter. This will denature the papain enzyme that can digest proteins and ruin head retention. (Thanks Isomerization!)
Add pineapple 48 hrs after yeast pitch (5 days).
Add vanilla and dry hops 72 hrs after yeast pitch (4 days).

Notes: Bavarian Hopfenbombe Pils #9
Lager - bottom fermented
Yield: 7.75 gallons
Target Fermentation temp: 48-49 F.
Ingredients:
9.0 gal filtered water
11 Lbs. Pilsen Light malt powder (Briess)
7 oz. fresh Saaz hops (boiling)
2 oz. fresh Hallertau hops (finish)
2 oz. Tettnanger Hop Pellets(finish)
2 packs Saflager 34/7 - made yeast starter in warm water
Boiled about 9.0 gallons of water total
Added 11 lbs Pilsen light powdered malt total, stirred well, and boiled for about 5-10 minutes,
before starting hop addition.
HOPS WERE PUT LOOSE INTO THE WORT, and hand-filtered out with a metal mesh strainer.
Hop Schedule:
3 oz fresh Saaz hops @ start of boil
2 oz fresh Saaz hops after 30 min
2 oz fresh Saaz hops after 60 min
2 oz fresh Hallertau after 75 min
2 oz Tettnanger pellets @ end of boil
Turned off heat, let wort cool for about 2 hours - removed hops by filtering.
After cooling, screen-filtered repeatedly until wort was as clean as possible.
2 packs of Saflager 34/7 were pitched into glass measuring cup
and a yeast starter created. Cultured about 12 hours, using 1/2 cup of filtered warm water, and 1 Tsp malt powder added after about 30 minutes. Stirred well.
Moved wort into the bathtub at 60 F. water, for faster cooling.
Waited about 12 hours for wort to cool, then pitched yeast starter, and stirred.
Removed half of the wort into another 8 gallon fermenter, for easy transport to beer fridge.
Then poured balance of wort into 8 gallon container from spare container.
Temp at time of pitching yeast - <>~ 60 F.
Temp was kept at 48-50 F in beer fridge.
After 24 hours, yeast became very active and started to foam.
Head was infiltrating into the air lock with active foam and had to be cleaned about every 8 hours
for the first 2 days.
At around the 3rd or 4th day, the head had started to fall.
By day 6: Fermentation quite active, a bubble once every 12-13 seconds (Fermentation Temp 49 F. (average))
Fementation died down after about 2 weeks. Air lock would occasionally drop and then I would add a little extra water and piston would rise again under pressure after a few hours.
Bottled on day 23.
Used 10.3 ounces light DME to carbonate about 7.75 gallons at 68 F. (2.55 Atmospheres)
After 15 days of bottle fermentation, all bottles were moved to the cooler, and temp lowered to 32 F. |

Notes: Beer pours hazy and brown with a nitro-like head. Very thick and creamy mouthfeel. Aroma is strong with the citra taking center stage and the hop aroma is almost transformed into sweet candy like notes. Taste is a bit on the sweet side likely due to some unfermented oat sugars but blends into the overall flavors well.
The malts leave a few things to be desired in terms of color and slight excessive sweetness, but the hops and hop schedule is highly recommended |

Notes: My first recipe. Started as a simple chocolate stout kit that I altered and tweaked to increase gravity (abv%) and lean the flavors towards Mexican mocha stout.
Bottled and tasted, didn't pick up on cinnamon, nutmeg, and coffee flavors much. Maybe increase amounts next batch. |
