Notes: Added the coconut and lime zest at the same time for the last 2 days in the secondary.
For bottling I added a pinch (really precise) of CBC-1 yeast of Lallemand with 4,5oz of dextrose. Did not affect the sourness of the beer either.
Boil was a little to light and didnt't convert enough sugar to get the OG needed.

After the success of the first version of Sidewalk Shark (a BrewDog bar exclusive), we decided to brew a second version, this time infused with tropical flavours of pineapple, coconut and lime. Be careful with your salt additions. A very light saltiness aids the refreshing character. It should not overpower or drive you to seek another different beer to refresh your palate.

| Notes: 12/8/17- blended the two batches together as there was slightly different characters on both after they were blended with the last beer from the barrel and not my regular funky/spon/house strain. One was about 1.004 and the other closer to 1.010. I added 4 ounces of Tettnanger to one and 4 ounces of golding's to the other to see which character I liked best. Hopefully it will be ready to bottle in another month. |

Mashed high at 69 degrees for 60 mins
Started fermentation at 20 degrees and ramped it up over a month to 28 degrees.
1 kg frozen raspberries thawed added to primary towards end of fermentation
3 mexican vanilla beans (split, chopped and prepared) soaked in spiced rum for 1 week then added to primary towards end of fermentation
125 grams of cacao nibs soaked in spiced rum for 1 week then added to primary towards end of fermentation
10 ml of Bourbon vanilla extract added to keg
200 ml of creme de cacao white added to keg |

Plenty of coffee notes, some woodiness from a Maple Syrup addition in the primary which was complemented by the pine flavours in the hops. The hop profile added a very light lemon thing too.
Light body for a dark beer.
