Primary in 5gal fermenter
Transferred to secondary at 6 days (almost 1min between bubbles)
Gravity at 1.010 - Exceeding expectations
Aroma amazingly spot on with the orange marmalade from the Pacifica and the Nelson Sauvin white wine profiles.

Fermented in small unused bathroom with very small space heater, extra space in fermenter, and plenty of WL yeast probably why we exceeded target FG already.

Bottled 2/23/16 FG 1.009 9.45% abv
I think the small part of the Nelson Sauvin came through much more intensely now, more pronounced white grape-darker fruit flavor, less citrus/orange. Will have to see how it conditions now.

Notes: After my Mom passed, I found 5 lbs of Honey in her house. Even though she didn't like the taste of Alcohol she was always amazed that I brewed my own Beer. I couldn't think of a better way to honor her than name this Braggot "Mom's Braggot". The batch I made with her Honey turned out so great, Was honored to be able to honor her in this way. I am not sure what kind of Honey it was.

Add coarsely ground coffee in hop sock at flame out.
At bottling or kegging add 2 oz coffee cold pressed in 8 oz water to bottles or kegs.
Fill Mash tun back up with 9 gal water, add 1lb 2 row and .5 victory malt, makes a good partygyle brown. |

Grainbill
- Weyermann Extra Pale Pilsner - 72%
- Weyermann Pale Wheat - 12%
- Flaked Oats - 16%
Mash Schedule:
- 49 C 20min (our lauter tun does get a bit unhappy when we skip this step, otherwise would skip)
- 67-68C 60min
- 72C 15min
- 76-78C mash out
- Mash pH 5.1-5.2
Water Profile
- Target 150-200 ppm chloride, 0-100 ppm sulphates.
- CaCl2 & CaSO4 Mostly dosed in the mash, with some top-up in kettle.
Boil
- 60 min boil ltime
- Centennial 0,2 kg hops /1000 L wort
- 4% of extract worth of sugar dosed in 15 min before end of boil.
- 1kg hops /1KL wort at end of boil (15-20 IBUs).
- Use lactic acid to adjust post-boil pH to 5.0 if target is missed.
- Citra 2kg hops /1000 L wort at whirlpool @ 70-75C. 40 minutes.

- WLP066 III
Dry Hopping
At the end of fermentation
-Citra 2kg hop /1000 L
-Cryo Citra 2,5 hop /1000 L

After dry hopping, raise the temperature to 22 degrees
