I kid you not this was fermented at 62 and kept there for 6 days before raising it to 65 (a big you must do)this yeast is best fermented cold
I did filter this with a 5/1 filter combo so it might have changed the color lighter than it would other wise
this was a huge success, great summer beer medium body golden in color and smooth as hell, gotta name this great summer beer Ozarks Golden Ale |

Notes: Mash at 156 degrees for one hour. Sparge with 3.5 gallons water (or more) to make 6.5 gallons wort. Bring wort to boil. Add 2# DME Amber and 2# DME Light and hops. Boil 90 minutes. Add irish moss at 15 end of boil. Add yeast nutrients at 10 end of boil. Cool to 70 degrees, transfer to fermenter and pitch yeast from yeast starter. 2 weeks in primary, 2 to 4 weeks in secondary. |

Notes: this turned out to be a very strong flavored beer with a caramel overtone, ran it through a 5 micron filter then dry keg hopped with 1/2 ounce each of Amarillo, Cascade and Hallertau tied to the bottom of the dip tube then bottled through it to end up with a nice finish, overall very nice and twice the flavor than most Belgian Saison's but I think this turned out very good! |
