Recipe was created for the wild card category of the brew contest... "beer with aromatic malt, turbinado sugar and cinnamon"
started with 2 gallons pre-boil. volume after boil was 0.8 gallons (lost 1.2 gallons to the boil.) Need to increase pre-boil volume to 2.75 gallons to end up with 1.5 gallons post-boil
measured OG was 1.080 after top-off
I will probably add a little wheat malt and/or oatmeal next time for a little more mouthfeel and head retention. Also suggest increasing (doubling?) the cinnamon, since I could not taste it. The 2 main "dings" on the scoresheet were
1. mouthfeel a little too thin.
2. cannot taste the cinnamon enough |

Notes: This bier is running a 93% AA going into the secondary, has a nice aroma, dry,excellent mouthfeel for a flat bier, nice head and lacing and shows a lot of promise, we will see in a couple months,when is is carbonated and conditioned,
but it looks like it will be way outside the box
Way outside the box, don't drink before Belgiums, if you want to taste them, very hoppy, anything but watered down, reminds me of Europe. |

Notes: Oxygenate-aerate well. Ferment at 68 F for 7 days the rack into secondary. Ferment until target gravity has been reached (ideally 1.015-1.016) and beer has cleared (3 weeks prox.)
Three days prior to bottling, add Gelatin, and cold crash in the fridge to clarify the beer (optional but works great).
Prime and bottle. Carbonate at 70 to 72 degrees for 2 to 3 weeks. |

Notes: Mash steeping grains at 156 for 45 minutes because of the flaked grains
I kid you not this was fermented at 62 and kept there for 6 days before raising it to 65 (a big you must do)this yeast is best fermented cold
I did filter this with a 5/1 filter combo so it might have changed the color lighter than it would other wise
this was a huge success, great summer beer medium body golden in color and smooth as hell, gotta name this great summer beer Ozarks Golden Ale |

Notes: Mengden meske- og skyllevann du bør bruke kommer an på utstyret og metoden du brygger med. Som et anslag kan vi si at du kan bruke 20 l meskevann og 10,3 l skyllevann til dette ølet. Noen bryggemaskiner (f.eks. Speidel Braumeister) kan kreve større mengder meskevann. Sjekk alltid manualen på utstyret du bruker.
Mesking på 65 grader i 90 min. Utmesk på 77 grader i 5 min hvis du har mulighet til å øke temperatur i mesken.
Kandissirup tilsettes de siste 15 min. kok.
Kjøl ned til 17 grader før pitching av gjær.
Start gjæring på 18 grader og la stige gradvis til 22 grader ila. 4 dager. Hold på 22 grader til FG er stabil. Senk deretter til 20 grader før tapping. Totalt 14-21 dager gjæring.
