brew day.
removing the hallertau mittelfruh and saaz in favor of nobility. adding some hallertau magnum i have in the fridge and then im going to have to add some warrior to get the rest of the way on ibu.
i picked up 10 gallons of glacier RO water from publix and added all treatments to strike water. next time prob need to get 15 gallons.

copied into new recipe to change to 10 gallons. this time will be using reused bavarian lager 2206 yeast from maibock 5 gallon batch. i think half the cake in each fermentor will be ok.
Redoing the water, not sure what it was set to before....
appears there is no real way to get a decent water profile for light lager from my house water. hopefully i can get a couple of those 5 gallon jugs and not have to buy 10 damn gallon jugs from grocery
im not sure but i think i can just add all my water additions to the mash water and be done with it? use straight distilled for the sparge

brew day. changing recipe to reflect saaz are actually 2.8 instead of 3.5. and i accidentally added .5 oz at 30 and flameout instead of .25 and .75 respectively.

copied into a new recipe today to mess with water profile. thinking about starting with distilled or purified (not sure if this is the same as RO) and building. looked at the pilsner preset profile which is very soft but that is just base water and suggested will not work correctly for mash and yeast health! instead looking at actual target profiles for czech pils i found online, debating between two (one from AHA forum, other from braukaiser) link in the water profile.
be sure to add acid only to the mash.

i rushed the end of this brew to have it ready for a trip to nj.
i believe i let it warm to 70 on day 10
cold crashed on day 11
kegged and carbed on day 12
canned on day 13
the cans turned out a little weird once we got to nj. diacetyl or dms or something. maybe a packaging issue.
when i returned home (day 25) the beer is still crisp fresh tasty and now clear.
overall i wouldnt be scared to try this fast fermentation schedule again, it turned out pretty clean. probably would want to start the diacetyl rest earlier and maybe for one more day. and it would be ideal to cold crash for at least a week before kegging. maybe two if you can stand it :-)

brewed last night. original recipe i had 65% efficiency but came out at like 72. wanted to land at 4.9% but this will be 5.5%. oh well.
i think my efficiency is actually decent for 10-11 lbs grain, then goes down as i add more and more grain.

not sure if i will use this on this brew but for reference, here is rusty's fast lager schedule :
1. 50deg for first 48 hours
2. raise one degree each day for 10 days
3. on day 11, allow temp to free rise to (warmest temp in brewery, but lets just say 70)
4. 9 days later start the cold crash |

Notes: Farmhouse Ale brewed with Laurent, with WLP670 'houseculture':
WLP670, yeast blend from Geuze, Brett. C. and Orval Brett. Taken from a previously fermented saison with this blend.
Start of ferment too cold (12 C), fermented on 24 C. Lot of fruity esters coming from fermentation. reached 1.013 in 3 days, ramped to 26 after 4 days.
5 weeks in, thick pellicle and gravity is 1.006. Smells very funky and bretty, also getting slightly tart.
Tasted after two weeks in the bottle:
Very very dry. Hops coming through nicely with subtle funk and a bit tart. Comment from Laurent: Like a hoppy Chardonay. Very vinous and dry indeed. Perfect beer for a warm day now. Really excited for how this will be in a few months.
Super super awesome, shame everything is gone already. Turned out pretty tart.

Mashed for 90 min at 149.
added 4.5 gal water @ 168. Mashing for 20 min to allow bed to settle.

5/31/15 8:17 | Chest Freezer temperature is 62F. Turned up.
6/3/15 16:00 | Freezer temp was 77. Removed from freezer and placed in garage.
6/3/15 17:40 | SG 1.011 Still has some krausen. Bubbles at 1 minute.
6/7/15 10:15 | SG 1.10. Lot of floating material . Kind of watery but still drinkable. Transferred to secondary because I found a crack in the glass carboy which I was going to use for the next brew. So instead I put the carboy in tub and racked this ale into it, and dumped bunch of trub. Having a weiss beer in prod in the ale pale will reduce my desire to keep fucking around with this golden ale.
6/11/15 08:20 | SG 1.003 + .001 Temp correction (per brewers friend) = 1.004 (ABV: 10.11% to 10.5%)
6/12/15 8:30 | Added remaining 0.25 ounces of Hallertau. Removed space heater.
6/13/15 3:00 | Sampled: SG 1.0025 Temp Corrected (per brewers friend) (ABV 10.6%)
6/13/15 ?? | Placed into chest freezer for cold crash
6/14/15 | Bottled 3 - 3.5 gallons into 20 flips tops and a handful of thinner bottles at 4 volumes. SG with priming sugar 1.10
6/15/15 9:00 | still in chest freezer at 40F
6/15/15 09:00 | moved into house to make room for hefewesien in freezer.
6/17/15 10:15 | The couple gallons remaining in carboy is still bubbling a bit but that could be formerly dissolved CO2 from cold crashing. Nonetheless, is good sign that O2 has probably been pushed out.
6/18/15 | bottled remaining beer into 6 thick bottles at 4 volumes. FG: 1.004
