I added the pound of Blackswaen Biscuit malt for the 8 oz in the kit. Just kegged and made 12 bottles for curious locals. The Mangrove Jack M44 was a little elderly, about 6 weeks past its date...but it is supposed to be a chico strain - anyway, it didn't dry out as much as I hoped...finished at 1.010. After a week or two on gas, I'll give it a taste. I did get better attenuation than predicted above. If this had been US05 - it would have dried out to the bone - down around 1.005 or lower. I had the M44 and needed to use it... I'll have to use it again to confirm this is its' behavior - I fermented at 64 for 14 days and then crashed to 38 for a week. Clear, clean transfer to keg. Hope it tastes good when I sample it.

Mash out at 168° F (76° C), with pre-boil wort volume of 6.5 gal. (25 L). Bring to a rolling boil for 60 minutes, add hops, honey, lactose, and ginger at specified intervals from end of boil. Chill wort to 65° F (18° C) and pitch yeast. After 5 days, rack to secondary fermenter and age for another 10 days, adding remaining ginger for the last 7 days. Keg at 2.5 volumes of CO2 or bottle condition with 4 oz (113 g) corn sugar. Clover honey
