After sparging we had only 6 gallons in the kettle, and decided to add 0.5 gallons so we could still boil 6.5.
Pitched 3/4 pack of WLP300 @ 72F into temperature controlled catalyst fermenter set to 72F - started bubbling in approximately 2 hours. 5.5 gallons made it into the fermenter. Extremely vigorous fermentation after 24 hours with high amount of CO2 blowoff. Vigorous fermentation lasted for approximately 48 hours, and continued to ferment with a medium amount of blowoff for the next two days.
Multiple E3 errors encountered during mash. Fixed by letting sit for 5 minutes, resetting bottom switch, and doing only 80% power. Wort started a milk color and was a transparent straw color by the time we boiled. Recirculation was used for the full duration of all temperature rests past the first 5 minutes.

Directions:
Mash the malts with the mash hops at 154°F (68°C) for 30 minutes. Raise to 170°F (77°C) and hold for 15 minutes. Sparge at 170°F (77°C) for 45 minutes. Collect 6.5 gallons (24.5 L) of wort.
Heat to boiling and boil the wort 60 minutes, adding hops at the times indicated in the recipe. Adjust original gravity post-boil with reverse osmosis water as required.
Chill the wort to approximately 68˚F (20˚C). Pitch yeast, and ferment between 60 ˚F and 68˚F (15.5–20˚C) until complete. Prime and bottle condition, or serve from keg if naturally conditioned during aging.

12 oz. (340 g) Briess Bavarian Wheat Liquid Malt Extract

Steep the dextrin malt, crystal malt, chocolate malt, and mash hops in a grain bag at 154°F (68°C) for 30 minutes in 1.5 gallons (5.7 liters) water. Remove the grains and mash hops and fully dissolve the malt extracts in the hot wort. Adjust kettle volume to 6.5 gallons (25 liters) with reverse osmosis water. Proceed with the boil and follow the remaining recipe as above.

Notes: This is an attempt to make a Winter Warmer style beer that has a kick but will be made in a small batch < 120Lt ~ 30 x 330ml bottles approx. The Apples, Raisins, Orange Peel, Ginger, Cloves and Cinnamon were all put in a draw string grain bag and added to the Mash wort and kept in a sealed FV bucket for 30 hours - Friday Evening to Sunday Morning - to steep the fruit. The Wort is set to boil and the steeping bag was kept in for 30 minutes to extract the flavours. The rest of the boil went as normal. |

Notes: had this shmaltz st lenny's belgian double rye ipa a couple years ago and it was awesome. only saw it in the store a couple times. never really could find a good clone until now. i dont think shmaltz even makes this anymore.
recipe was originally posted on their site (no longer there) and then scaled down by a homebrewer and posted on hbt. pasted below.
this recipe i put in almost exactly. theres no fawcet crystal ii so i used crystal 60. the recipe also says crystal 60/80 so i put in 80 but in practice i would probably combine the two and just just the 60.
also i took liberty in estimating efficiency at 77 which put the beer at 10%.
mods i would need :
* scale up for my system efficiency
* substitute extract for at least part of it. think i would still need to mash though at least for the rye and wheat. might need to use some base malt in the mash too to have enough diastatic power
* hops are a little crazy. could probably simplify and just use one or two or three hop varieties
* would need a decent sized starter

Mashed for 90 min at 149.
added 4.5 gal water @ 168. Mashing for 20 min to allow bed to settle.

5/31/15 8:17 | Chest Freezer temperature is 62F. Turned up.
6/3/15 16:00 | Freezer temp was 77. Removed from freezer and placed in garage.
6/3/15 17:40 | SG 1.011 Still has some krausen. Bubbles at 1 minute.
6/7/15 10:15 | SG 1.10. Lot of floating material . Kind of watery but still drinkable. Transferred to secondary because I found a crack in the glass carboy which I was going to use for the next brew. So instead I put the carboy in tub and racked this ale into it, and dumped bunch of trub. Having a weiss beer in prod in the ale pale will reduce my desire to keep fucking around with this golden ale.

Notes: 12.5 L Wasser mit 5.6 kg Malz (x2.2) eimaischen. Dann Läutern und Nachguss (kaltes Wasser) bis ca. 26L (ca. 11° Plato), anschliessend sour mash für 4 Tage bei 38°C mit 2 Pack Lactobacillen.
Hopfenkochen, Koreander und Salz dazu beim Hopfenkochen, kühlen und in Fermentor mit German Ale.
Evtl im secondary nochmal Salz oder Koreander (oder sogar Milchsäure) wenn zu wenig stark im Geschmack
