Notes: * Fermentation: Pitch yeast and ferment at 66-68°F (19-20°C).
Flavor Addition (Secondary): After 1-2 weeks (once primary fermentation is complete), add the additions.
* Cacao Nibs: Roast nibs at 300°F for 10-15 minutes to sterilize and enhance flavor. Add directly to the fermenter (or in a mesh bag).
* Vanilla Beans: Slice beans lengthwise, scrape out seeds, and chop the pods. Soak in vodka for 24 hours, then add to the fermenter.
Conditioning: Let the beer sit on the vanilla and cacao for 1-2 weeks.
* Bottle/Keg: Bottle or keg as normal.
Key Tips for Success
* Vanilla Extraction: Use high-quality vanilla beans rather than extract for a more natural, deep flavor.
* Cocoa Flavor: Cacao nibs provide a more natural, less sweet chocolate flavor than cocoa powder. If a stronger milk chocolate flavor is desired, consider adding 1 lb of lactose in the last 10 minutes of the boil (turning it into a Chocolate Vanilla Milk Stout).
* Avoid Astringency: Keep chocolate malt at or below 5-10% of the grain bill to avoid harsh, bitter flavors. |
