add 2lbs of cane sugar. Let 5 mins pass.
Add Lilac Flowers. Let 10 mins pass.
Add Yeast nutirent, lemon juice, and tanin chill to <80F
While chilling, Sani fermenter with one part vinegar one part distilled water. 5 min contact time. Dump sani, add chilled fermentables.
Pitch 1 pack of D47 yeast.

used all the sparge water . used gravity to run hot wort through the the spike counter flow wort chiller (CFWC) worked quite well with minimum water use. ran about 1 liter / 45 seconds and areated itself with a stream into the plastic primary fermenter.
Plan to ferment at room temp and prime with cornsugar in keg and bottle after.
sparge method undefined. since the Rims is the process to mash and it creates the filter bed. I make the liquor for the mash and the sparge in the Boil Kettle (BK). When mash is complete and the the hot liquour tank (HTL) is used to reach mash out temp in the mash tun. then I run the hot liquor in the BK thru the Rims coil in to the top of the mash tun. I then pump from the Mashtun in to the empty BK, works great because the flter bed is established. I use the hot water in the HLT to rinse the CFWC.

Notes: Mash grains with 15 qts. (14.2 L) soft water at 142 °F (61 °C) and hold for 30 minutes. Perform a decoction, pull 1/3 thick portion of the mash (~1.5 gallons/5.7 L) and bringing to a boil.
Boil for 15 minutes being sure not to scorch the grain mix. Stir the decocted portion back into the main mash. The main mash should now settle at 155 °F (68 °C). Hold for a 30 minute rest. Mash out, vorlauf, and then sparge at 170 °F (77 °C) to collect enough wort to result in 5 gallons (19 L) after a 90-minute boil. Boil 90 minutes, adding hops at times indicated. Cool, aerate, and pitch yeast. |

Notes: Pitch all ingredients into apple cranberry juice jug from supermarket. Screw cap halfway for airlock.
Empty 1/8 bottle for headroom, add sugar, add yeast into separate water cup to warm up, then pitch.
Fermentation may take up to a month to complete. Cold crash to end ferm cycle.
After fermentation is complete, pour through coffee filter before bottling. (add a splash of raw primary ferm into each bottle for carbonation)
End product has sweet kombucha-like taste, and continues slow ferm even after cold crash. |

6 US Gallons = 5 Imperial Gallons = 22.7 Litres
FERMENTABLES:
88.1% = 7.75 lb = 3.5 kg, Maris Otter Pale Malt
6.8% = .6 lb = 272 g, Dark Crystal Malt (≈90-115°L)
5.1% = .45 lb = 204 g, Flaked Maize (don't skip this essential adjunct, trust me)
MASH ≈ 152.6°F/67°C 60 minutes or until converted.
SPARGE ≈ 171°F/77°C, collect 7 US gal/5.8 Imperial gal pre-boil, to allow for evaporation
BOIL 60-90 minutes
HOPS:
.9 oz = 26 g, Progress, ≈6.3% AA, 60 minutes
.9 oz = 26 g, Bramling Cross, ≈6.5% AA, 30 minutes
.5 oz = 15 g, Fuggles, ≈5% AA, at flame-out, steep until cooled
