Notes: Overall Impression: A strong golden, mildly bitter, highly attenuated, and balanced carbonated Trappist-style ale, showing a fruity-spicy Trappist yeast character, a spicy-floral hop profile, and a soft, supportive grainy-sweet malt palate.
Aroma: High Trappist yeast character, showing a fruity-spicy character along with medium spicy and floral hops, enhanced by sweet orange and coriander spice additions. Heavy grainy-sweet malt backdrop, with medium-light honey quality. Spicy, yeast-driven phenolics.
Appearance: Dark gold color. Slight haze, with a moderate-sized, persistent, billowy-white head with characteristic lacing.
Flavor: Fruity, hoppy, bitter, and dry. Initial malty-sweet
impression, with a grainy-sweet soft malt palate, and a dry,
hoppy finish. The malt provides a honeyed biscuit impression. Moderate spicy and floral hop flavor. Orange, apricot, yellow apple esters. Pepper, and clove phenolics. Bitterness rises towards the dry finish, with an aftertaste of malty, moderate hops, and a yeasty character.

Temp gauge mishap!? strike temp 159. after grains temp 143, wft. flame on till temp 150. (But was my themometer just so off?!) Later mesauring temp for samples it was really screwy, saying ground water was 98 and then bouncing around, MFer! gonna buy a good one.
Post 70 minute boil ==> 4.25g into fermentor. ~0.25 left in kettle
after boil 22.0Brix = 1.092
Then clarified sample from fermenter = SG 1.087 (21.6 brix)
so pretty shity efficiency... ?!?!? <--high gravity
Pitched 1/23 at 10pm at 65F.
1/24 am - chugging away. Temp read 70 added blanket. Plan to free rise up to 80 for 5 days.
1/31 Brix 10.4.
2/2 Brix 10.3 Temp down to 60
2/7 Brix 10.2 = 1.013. Transferred to Keg (~4-4.2 gallons not sure). purged co2 Plan to bulk age 2 months at 50F
Kept a mason jar of yeast slurry to repitch at bottling.

Notes: Inspired by Rodenbach Grand Cru, New Belgium La Folie and Love, plus Pizza Port Le Woody. Formulated with help from professional brewers in America and Belgium that have experience with this style, this is another acid ale.
Step by Step:
Step mash with a rest at 122 °F (55 °C) for 20 minutes, a rest at 145 °F (63 °C) for 40 minutes and a saccrification rest at 162 °F (72 °C) for 40 minutes. Sparge with 168 °F (76 °C) water for an hour. Boil wort for 90 minutes, adding hops for final 60 minutes of boil.
Pitch the yeast and bacteria pack straight into the cooled wort (no starter). Ferment in a plastic bucket for 27 days at 70 °F (21 °C), then transfer to another plastic bucket and condition beer at 70 °F (21 °C) for 5.5 months. Keg beer. |

Notes: **Fruit Prep:**

**Brew Day 1**
**Mash**
-Hold 2 gallons of purified water at between 145-160F
-Put grain bag around kettle pot, fill with grain and stir a few times
-Hold for 1 hour
**Sparge**
-Squeeze grain bag out over kettle pot
-Put grain bag in bucket and poor purified 170F water overtop until covered
-Let sit for 10 minutes then squeeze out the bag and poor water into kettle pot
**Boil 1**
-Fill kettle pot up with purified water
-Boil for 15 minutes to sanitize wort
**Souring**
-Cool and maintain at 86-104F (optimal 95-100F).
-Add sour pitch
-Cover top of kettle pot with saran wrap and put in plugged sink
-Fill with boiling water occasionally to maintain temperature
-Sour to taste
**Brew Day 2**
**Boil 2**
-Boil for 20 minutes to kill the bugs
-Add Bittering (Centennial) hops at 20 minutes
-Add 4 pods worth of cardamom seeds at 5mins.
-Add Flavouring hops (Mosaic, Amarillo) at 0 minutes
> *remember that special hops are 2X as potent as regular hops at same weight.*
**Pitch**
-Cool to correct temperature on yeast package
-Add water to buckets but leave room for fruit
-Pitch yeast
**Additions (after 1 week)**
Dry Hop/Fruit/Vanilla
-Put fruit evenly in grain bags and let it defrost
-Add dry hops (Mosaic and Amarillo) evenly to hop bags
-Split open vanilla beans, scrape inside out and soak all in vodka for 10 minutes
-Transfer beer to big red bucket
-Clean fermenter buckets
-Put dry hops and fruit and vanilla beans into fermenter buckets
-Transfer beer back into fermenter buckets on top of fruit, dry hops and vanilla.
> *remember that special hops are 2X as potent as regular hops at same weight.*
**Bottling** (after 2 weeks)
-Take out fruit and hops
-Poor some measured amount of beer into a cup and add measured amount of lactose sugar to taste.
-Add equivalent ratio of lactose sugar to bottle bucket with 1 cup of priming sugar.
-Bottle as usual |
