Notes: Found a recipe for this online but for 11 gallons. I re-entered it and scaled it, plus modified it for the Cascade I have. I would really like to brew this one up. Also, I tried swapping Special B for the Munich 10L...that gets me really in the Amber Ale color suite.
Note - DAMN THIS IS GOOD BEER!
I recall that I had volume issues...e.g. I made like 4.5 gallons instead of 5.5 gallons. Trust me, you'll be wanting that last gallon. Even with elderly cascade hops and all that - t'was very nice. I wonder if the grain adsorption is higher for Golden Promise and Rye? I raised the water requirements to compensate.

Faint thick sweet aroma. Immediate nice good malt flavor with minor hints of hops. Finishes very cleanly with a bit of lingering maltiness, but overall very refreshing. Leaves your mouth watering immediately wanting more.
Man, seriously, I’ve never had crack before but this has to be the sensation. I really just want to gulp this down until it’s all gone. |

Notes: Inspired by Rodenbach Grand Cru, New Belgium La Folie and Love, plus Pizza Port Le Woody. Formulated with help from professional brewers in America and Belgium that have experience with this style, this is another acid ale.
Step by Step:
Step mash with a rest at 122 °F (55 °C) for 20 minutes, a rest at 145 °F (63 °C) for 40 minutes and a saccrification rest at 162 °F (72 °C) for 40 minutes. Sparge with 168 °F (76 °C) water for an hour. Boil wort for 90 minutes, adding hops for final 60 minutes of boil.
Pitch the yeast and bacteria pack straight into the cooled wort (no starter). Ferment in a plastic bucket for 27 days at 70 °F (21 °C), then transfer to another plastic bucket and condition beer at 70 °F (21 °C) for 5.5 months. Keg beer. |

Two weeks ago I bottled what is probably the best beer I've ever made in my single year of brewing. I call it an "Imperial Juniper Ale," which is essentially an imperial IPA with lots of juniper, a flavor I'm really keen on. I thought I'd share the recipe with reddit and welcome any feedback on the recipe, though this first batch turned out spectacular. I don't know much about hop varieties; I chose these by selecting "pine" aroma hops from the aroma wheel, and they seem to work well together and with the juniper: https://www.hopunion.com/aroma-wheel/
Imperial Juniper Ale
Makes 5 gallons.
OG: 1.086
FG: 1.008

Grist
13lbs pale ale malt
2lbs vienna malt
1lb extra light malt extract (I BIAB and my kettle is small)
0.5lbs crystal 60L
1lb evaporated cane juice added at boil
1lb turbinado sugar added at boil
Hops
2oz Chinook FWH
1oz Northern Brewer FWH
1oz Northern Brewer whirlpool for 30 minutes
1oz Chinook whirlpool for 30 minutes
2oz Styrian Bobek whirlpool for 30 minutes
1oz Chinook dry hop for 7 days
1oz Northern Brewer dry hop for 7 days
1oz Chinook dry hop for 4 days
1oz Styrian Bobek dry hop for 4 days
Yeast
50/50 mix of WLP001 and WLP099 started at 66F and bumping up to 70F within a week.
Method
Mash all grains at 148 for 90 minutes. Add 0.5oz crushed juniper berries into the kettle with the whirlpool hops. Add another 0.15oz juniper with the last dry hop addition.
Bottle with 4oz of maltodextrin and 4oz of corn sugar. ”

Notes: ACTUAL RESULTS:
SG: 1.060
OG: 1.076 (Going for 1.080)
FG: 1.014 (Going for 1.016)
Mashed lower than hoped -- 149degrees. Water in cooler was at 170 before adding grain. Kettle water was 175. Need to bump kettle water up to 182 to get where I want to be. I had to add a 1 quart boiling water infusion to get me close to where I was looking for at 60 minutes. Drained 4ish gallons each time. Hit great efficiency at 80%.
Musilin bag for the hops at 5 minutes and flameout.
Whirlpooled between 175-181 for 30 minutes. Burner was put on low after getting temp down too far. Rose over 20 minutes to 181.

I didn't have enough headroom in my 6.5gal carboy with 6 gallons of liquid. After 8 hours of fermentation, wort had 1 inch of Krausen. After 24 hours temp was at 68deg and blowing krausen through tube. Cleaned and brought temperature down. After 5 days, returned home after being away, krausen pushed open the lid (it remained on though) and filled up my blowoff jar. I need to use a bigger jar! Wort temp was 71 degrees. The Cool Brewing Bag not only contained the damage but probably kept a lot of bad stuff from entering, especially since the CO2 level in the bag was much higher. American II can handle this temp well so i'm unconcerned about fusels at this point.
Gravity after 5 days reads 1.014; recipe was looking for 1.016 but I also started 4 points lower with my OG. I'll test with a hydrometer in a few days when a rack over to secondary.
Gravity after 10 days reads 1.014 from hydrometer. 8.14% ABV, 81% attenuation.

Carboy went into the fridge for 1 hour to quickly bring the wort temp down to 62*. Transferred primary to the cool bag with a gallon ice for another 20 hours.
Purged secondary and racked onto 1oz galaxy, 1oz citra on day 11. Smells and tastes amazing -- extremely pineappley, some tangerines as well. Reminds me more of fruit juice than beer at this point.
