Notes: All grains and pumpkin go in the mash. If the pumpkin is in the boil you will most likely lose a gallon of water, and have a tough time straining the pumpkin out.
If you really want to put the pumpkin into the boil then you should use a grain bag or filter the wort before racking to your primary.
The pumpkin should be cleaned and cut into small cubes and baked for 45 mins at 350, then mashed and coated with honey. Then baked for another 45 mins at 350. Let it cool to 154 and add to mash.
For the vanilla bean vodka solution, one vanilla bean is cut in half. The seeds and goodies are then scraped into 2oz of vodka. Let the vodka sit for two weeks. |

CONVERSELY ... the higher chloride batch (95ppm / Sulfate = 66ppm) gives more malt character and less hop sharpness. This has become less mini IPA and more true summer sipper. Crystal clear in a week too. I think I prefer this version. Maybe it was the 1.006 finish? Might even up the sugar from 13% to 18% for a tiny little extra dry finish. Overall ... A-
75% is bang on for brewhouse eff w/ no sparge
7-9 degrees hotter in F strike to hit mash temp
V20. Moderate sulfates, nice mosaic pop, DROPPING boil kettle hops is absolutely the way. Gonna try direct sub for citra next year. Don't mess with this one otherwise! (Already messed with but doing heavier chlorides for body while chasing mid 2%s) |
