Notes: Steep/mash grains in 0.8 qts water at 155* (~165* strike temp) for 45 min. Sparge with 0.5 qt (1 pt) water at 170*, then add 6.2 qts water for a 1.875 gal (1 gal, 3.5 qt) boil (90 min to reduce DMS), to aim for 1 gallon into glass jug for fermentation.
Primary at 50*F for 2-3 weeks. D-rest at 64*F for 2-3 days. Rack to new 1 gal jug and lager at 34*F for 7 weeks minimum.
Prime and bottle to 2.3 Vol CO2. |

Notes: use 50% distilled water on the stove method, add steeping grains in a muslin mesh grain bag in the cold water. heat to 152 steep, let it steep 30 minutes. boil add dme and sugar stir stir stir, add hops per schedule. cool in sink with ice, add water to carboy reaching 5.5 gallons, stir, stir, stir then ferment cold around 62 for 7 days, then heat up to 68 for 2 days, condition cold at 36 for 7 while carbing, great fast IPA |

Notes: 1.7kg Coopers English Bitter
1.5kg TC Amber Malt Extract
STEP 1: Mix
First crush malt grains and tubes of these in a saucepan with 2 liters of hot water boiled.
2nd Remove the pan from the heat, let it all soak in for about 30 minutes, then set the pan in cold water to cool down.
3rd Dissolve Light Dry Malt in the fermenter in 2 liters of hot water.
4th Add the strained, cooled with liquid chocolate malt in the fermentation vessel and ölsatsen English Bitter and TC Amber Malt extract and mix well.
5th Make up to 25 liters of cold water, stir very vigorously and add the yeast.
STEP 2:
Try to let the fermentation take place in the 18C to 21C.
After a few days of fermentation; add Fuggles and ECG pellets.
Very nice dark beer! |

Notes: Inspired by Kraken Meadery's Loud Mouth Braggot by Steve Kirby. Orange blossom must and a saison wort, fermented by Belgian Saison III yeast. Used Sorachi Ace hops, orange peel and pepper. 12.3% ABV.
Mine:
1/4 tsp nutrient in the boil
then added 1/2 tsp nutrient when adding the honey. This gives total of 200 ppm (3.6g in 18L, 1/2 tsp=2.2g).
Did a 1.5L starter with the harvested yeast from my Angeleno Saison. |

Notes: An English style barleywine with a German influence.
- Make a 2 liter 2-step starter culture of the yeast at least 48 hours prior to starting. Cold crash the first starter and decant after 24 hours. Then make the second step, cold crash and decant. Bring the yeast slurry up to room temperature before pitching.
- Ferment until final gravity is achieved
- Transfer to your secondary fermentation vessel
- Condition in the secondary for 1-2 months
