I added 2 pound of sugar to boost the ABV, and added the DME and sugar at 30 minutes in the boil to raise the IBUs. The kit recipe calls for 0.5 oz of Centennial at 60 minutes, but the kit comes with a full ounce. I added 0.5 oz at the start of the boil, and over the next 30 minutes I periodically threw in 3-4 pellets every few minutes. |

Notes: Version of my tried and true mead recipe for some friends who are just learning to brew. This uses 1/3 wildflower to make it more interesting than straight clover honey. I use dry malt extract as a nutrient source and chalk to buffer the pH during fermentation, as I've found this to make my batches very clean and predictable (no stuck fermentations). Typically even a strong mead as this will be very nice to drink in less than 3 months. I try to always use Wyeast Dry Mead as it is very predictable and drops ~100 gravity points, making it easy to achieve the desired final sweetness. This mead will be semi-sweet and should finish around 1.020.
Directions: Bring 3 gallons water plus malt extract to boil, add chalk & irish moss, boil 15 mins, turn off heat, add honey, steep for 10 mins, top off with water to yield full 5 gallons, chill, aerate and pitch yeast. |

Notes: This recipe uses the Palmer Brewing method:
- Make up wort in 3 US gal (11.4L) of cold water (on the heat) using half of the total DME. Heat the water up to steep temperature before adding the steeping grains.
- At the end of the boil add the remaining DME and allow the final hop addition to steep.
- Cool and add the wort to 3 US gal (11.4L) of cold water in the fermentor to make up target volume. |

Notes: Significantly modified from original Midwest recipe in that I added an extra pound of Golden Light DME and did this as a split batch in the secondary phase. I zested and juiced 3 limes which were put in the boil. I left the beer in the primary fermenter for one week. For Secondary I split the batch into (2) 2.5 gallon glass carboys.
For 1 batch I roasted 2 large jalapenos and sliced them thinly. I placed them in a mason jar and added 2/3 cup of vodka (for sanitizing). I let it sit for 24 hours and then poured the whole mixture in.
For the 2nd batch I left the original beer as is.
Let both sit in secondary fermenters for 1 additional week then tasted. The unaltered batch was excellent. The Jalapeno batch was very spicy and had a strong raw pepper smell/taste.
After bottling and sitting for 6 weeks, the Jalapeno batch has mellowed in its pepper taste but still remains very spicy. This will be an excellent beer in a few more weeks.
