Grains limited to 8lbs in a 4g boiling pot.
Don't 'squeeze' the grain bag to avoid sharp flavors; this is a more "bread-y style" from the historical transition from mead(honey) to agriculture(grains). Add all grains in 3g water at 160f, wrap in blanket for 1-2hrs, stirring every 20mins or so...iodine test for "doneness".
Liquid extract in the last 10 minutes of boil to keep SRM lighter.
Primary fermentation just 5 days at 60F (wrapped in a blanket)
Rack to secondary (5 gallon bucket with sealed lid*) to lightly carbonate in this "cask".
* Lid modified with a pick-up tube and valve such that Ale can be lightly carbonated and pressurized in the plastic 5g bucket for DIRECT serving. Yeast will re-pressurize the "cask" (if you don't drain too much of it in one serving). Siphoning to a Growler is also good to have in the 'fridge. A syringe can be used to "fluff" the head of the Ale in a glass (this was popularized with Guinness Stout for a time) Allegedly, Guiness has some history in Wales.....wiki
Forgive the Carapils; it provides longer lasting 'head' to compensate for the low, natural cask carbonation level.
The "Brown" gains are to achieve the Minimum SRM, since color is often darker than estimated when I brew....

After first 24 hrs of fermentation, raise temp. to 78-80 deg F.
Submitted bottle for pre-qualification tasting for 2015 Indian Valley Beer festival homebrew competition. Out of 25 entries, was 1 of 12 chosen to go to the event.
BJCP beer judges comments:
Farmhouse beer, a lot of carbonation, fantastic spicey character, almost too spicey for a Grisette. Doesn't taste table strength. Good heavy minerality. Exemplifes the yeast character well. Mineraly astringent finish. A little chalky. Overall good.
Turned out great! Won 1st place Popular vote and 1st place Judge's vote at 2015 Indian Valley "Brews for Books" Beer Festival. |

Notes: Trying to replicate the super-delicious Insubordination Pale Ale from Elysian Brewing Co. Described as using Chinook and Centennial for bittering then Simmcoe and Citra for finishing.
Gonna do a stir-plate starter with one smack pack of yeast. Get some dry yeast as a backup.
Have oxygen stone for aeration.
Initial boil volume should be just right for a 5.5 gal batch.
Had to substitute Amarillo for Citra. |

Notes: Modified an Kona Castaway clone All-Grain recipe for Extract plus steeping grain. The final specs for the brew closely match those of the All-Grain recipe, however I modified them to reduce the ABV to a more likable 5.6% vice the 6.4% ABV of the All-Grain recipe. Kona website says their Castaway is 6.0% ABV. Also added a bit of 60 L Crystal to the 20 L called for in the All-Grain recipe, to bring the SRM to 10. No comment re: SRM on the Kona site. Also, increased the fermentation volume to 6 gallons to net 5 gallons for bottling in view of dry hopping which always has a bunch of waste due to hop trub. The hops specified on the Kona site, were the ones I used. Adjusted boil volume to allow the hop quantities specified in the All-Grain recipe to hit the Kona-specified 50 IBU.
So, except for the lower ABV, this ought to taste a lot like Kona's Castaway. |

Boil kettle #1 - 10 gal Mega Pot
Boil kettle #2 - 7 gal stainless steel pot
Additional water was added to the pre-boil pot to compensate for losses in evaporation and absorption. We were shooting for roughly a 6-8% loss in water volume during the boil process.
The cascade hops were added at the 55 minute mark or 5 min boil time instead of 10 min. We wanted to retain more of the hop essential oils and aromas in the wort.
The beer had quite a bit of sediment/trub in the pot as we experienced a few clogged hoses and a clogged pickup tube during the racking process from the boil kettle to the fermenter. Most of the sludge was due to hop material that had absorbed liquid wort. Next time it would be worth the effort to contain the hops in a cheesecloth bag or some type of strainer vessel.
10 gal brew pot #1 had additional water added after the boil to bring up the volume to roughly 5 gal. Not sure why there was a significant difference between pot #1 and pot #2 with regard to water losses during the boil. Perhaps pot #1 had a more vigorous boil.
Post-boil gravity was 1.075 in a 70 degree room.
Racked beer to keg on 1-22-17. Initial tasting was excellent. |
