Step by Step:
Bring 2.5 gal. water to boil. Remove from heat and add dry malt, honey. Return to boil. Total boil is 60 min. Add 0.25 oz. Cascade and boil for 30 min. Add 0.25 oz. Cascade and boil for 15 min. more. Add Whirlfloc and boil for 10 min. more. Turn off heat, add 0.5 oz. Cascade hops, and steep for 2 min. Strain. Pour some water in the fermenter, the pour wort into fermenter and top up with cold water. When cooled below 70° F pitch yeast.
Ferment 7 to 10 days in primary at 70° F or below until gravity is about 1.010

Notes: Very standard beer recipe with a few minor editions. Using finely diced dehydrated sweet Orange peels in the last fifteen minuets of boil and adding Raspberry extract to primary to help give this wheat beer a bit of a fruit background while using medium alpha acid hops to prevent it masking the fruit addition. |

Notes: This recipe follows that given by Charlie Papazian in The Complete Joy of Homebrewing, 3rd ed., (pp.218-219), with a few changes. I've added 1 lb of dried rice extract to boost the alcohol content, and 5 oz of dextrine malt to improve the head. I am also using Irish ale yeast instead of American ale yeast. The cherries used are different as well. Charlie calls for 3 lbs of sour cherries and 2 lbs of choke cherries. I plan to simply use 5 lbs of ripe red cherries. |

Steep grains at 150-155 degrees for 30 minutes.
Add lactose with 5 minutes left in the boil.
The small amount of "light malt extract" was added to bring the ABV up slightly, into the desired range. It was not in the original recipe from NC Beernut, and could easily be left out.
Aroma hops addition was also not in the original recipe, and can be left out, but I think leaving it in makes a better beer.
Ferment at 65-68 degrees for 3 weeks.
A very simple, easy, delicious stout. Even my BMC drinking friends who "don't like dark beer" love this brew. |

Brew Notes
-Used two vials of White Labs yeast instead of making a starter
Directions
Place grains in a grain bag. Put grain bag into 1 gallon of water. Heat to 155° F and steep for 30 minutes. Remove grain bag and drain into the brewpot.
You can rinse the grain bag with hot water but do not squeeze the bag. After removing the grains add water to bring the total to 6 gallons.
Add the malt extracts (DME&WME) and bring to a boil. Add the Hallertauer and Fuggles hops and boil for 30 minutes. Add the Servormyces and continue boiling for another 30 minutes. Add the Clear Candi Syrup and boil for 2 more minutes.
Add 1 oz of Hallertauer Hops at the end of the boil. Cool as quickly as possible.
Add the yeast and aerate thoroughly when temperature drops below 68° F.
Start the fermentation around 68° F and then allow temperature to rise during the primary fermentation to 75° F. When fermentation is complete rack to the secondary fermenter and cool as much as possible, 32° for 3 days is ideal. Then bottle or keg the beer.

Notes: whirlpool after flame out until the temp reads 180 then chill, I used a stainless trub filter before my plate chiller with a 0.3mm Filter Net to strain
this should come out a little sweet at first so carb to compensate, I let this age 15 days, the flavor improved and beer cleared perfect |

Notes: Intended to be in the family of home brews Katie Luther may have brewed for Martin in the early 1500's. The name comes from nun Katie's escape from the convent in a used herring barrel. This is the first iteration of the original recipe which seemed a bit too hoppy. I backed off the Hallertau by 1 oz.
Cooled with copper coil cooler and garden hose to 90 deg F. Added 2.9 gal room temp water, brought down to about 74 deg F. Aerated wort for 20 seconds with oxygen and metal stone. |
