Notes: Begynn med å varme opp 24 liter vann til ca. 70 grader i en stor kjele (bør være minst 30 liter). Sett boksene med flytende maltekstrakt i et bad med varmt vann (trenger ikke være glovarmt) ved siden av for å få maltekstrakten mer løselig og enklere å få ut av boksene. Når vannet i kjelen er varmet opp, rører du inn både den flytende og den tørkede maltekstrakten (DME/Spraymalt) til alt er oppløst i vannet og koker opp. La koke i 60 min og tilsett humle som beskrevet underveis.
Kjøl ned til 17 grader før pitching av gjær.
Gjæring på 18 grader til stormgjæring begynner å avta (typisk etter 3-5 dager). Øk deretter til 20 grader og hold resten av gjæringsperioden (totalt 14 dager). Tørrhumle etter 5 dager.

Notes: I have never used Zythos hops before, but thought I would give them a try as I received 6 oz. free from Williams Brewing.
Steeped crystal 40 at 155F for 25 min., then began boil. Bulk of extract was added as late addition.
I pitched onto half of the yeast cake from prior beer that I was bottling the same day. The yeast was one pack of Nottingham and one Wyeast 1272 Amer.Ale II.
Four weeks in primary, no secondary fermenter. Dry hopped with 2 oz. Zythos pellets for last 10 days. I just threw them in loose.
At bottling time the beer had a pleasant pineapple/citrus smell. Primed with 5 oz. of cane sugar.
Starting gravity was 1.073 and finished at 1.017
This was just a test of some zythos hops that I had and it turned out good, but not great. I would like a hoppier and less sweet beer so next time I will be making some changes. I will half the crystal and use something like magnum to bitter with and add some simcoe along with the zythos for flavor/aroma.
10 months later...this beer actually smoothed out and was pretty decent, too bad i was on my last bottle. |

Notes: Lower steep/mash temp (148-150) should get you a lower dryer gravity
Add belgian candi syrup before the boil, taking kettle off heat. Another clone i read used D-180.
Add DME just before boil to avoid boil over.
Yeast Temps: Style suggests starting an abbey yeast at 64f up to 68f for 48hrs to minimize fusels. At 1/3 sugar break move it to 74-78f. The yeasts could increase to these temps on its own also. This is something I will attempt by moving out of my basement to warmer rooms at about 1.046 gravity or sooner. Update: Mine took about 4 days to hit 1/3 then I moved it to a 70f room.
Wyeast 1762 is supposed to be the Rochefort Yeast. White Labs WLP540 is also Rochefort. Other alternatives; Wyeast 3787 or 1214
Mount Hood is an Alternate for Hersbrucker hops with a higher AA. Reduce by about half. From .5oz to .2 oz. You could instead remove the 60min Styrian. This would keep the IBUs from overpowering the style.
Take note of higher priming sugar. Style suggests higher volume. 2.5-3 vols
Bottle condition recommendations are longer. Minimum 6 weeks, but better at 2 months.
Update: Fermentation smells like banana about 7 days in and after I had moved it to a 72f room.
Update!: This recipe works! It taste near close to a proper Trappist Rochefort. After 6 weeks aged I smell banana, its strong but sweet covers it up, its a perfect dry. Letting it age took the edge off. |

Notes: This is an easy and delicious sweat cider. Here are the instructions:
• Buy 5 gal of fresh unfiltered cider (pasteurized)
• Buy 6 cans of Apple juice concentrate. (No preservatives or added sugar)
• Buy Yeast nutrient
• Buy Champaign yeast. I usually use 2 packs of the dry yeast because it only cost $ 0.75.
• Mix your cider, thawed apple juice concentrate, and yeast nutrient in a car boy. Make sure you start with the apple juice concentrate and top off with cider leaving room for fermentation at top of carboy.
• Mix well and take an OG reading.
• Shake really well for 2 mins and Pitch yeast.
• Seal with airlock and put in cool dark room for 7 days.
• Buy 5-6 more cans of apple juice concentrate and rack cider onto apple juice concentrate in bottling bucket.
• Mix well and bottle. (do not add any priming sugar) The apple juice concentrate acts as your priming sugar.
• Make sure you use proper sanitization throughout the all processes. (I use star no rinse sanitizer.)
• Bottle.
• Make sure to open a bottle every week to determine carbonation level. Once desired carbonation level is achieved refrigerate all bottles to stop carbonation.
