Notes: Add lactic acid in mash to drop ph to ~4.6. Kettle sour until desired ph/sourness is reached (ph around 3.4). Re-heat soured wort to kill lacto, lower temp for whirlpool, lower temp to pitching range, and pitch yeast. Hold in primary until final OG is reached, rack to secondary over blended blackberries. After 24-48 hours on blackberries, add dry hop. Let beer sit for 48-72 more hours then keg and condition. |

Notes: The malt is German oak-smoked wheat malt. Acid malt only added for my system mash pH. Use Polish Lublin hops for more authenticity (my LHBS doesn't carry them, so Saaz or other Noble hop works well).
Water volumes are for concentrated boil, then topping up to dilute. Preboil should be around 3.95 Gal; postboil should be around 2.95 Gal after 100 minutes; I lose about 0.2 Gal to hops, so should have about 2.75 Gal concentrated wort. Add 2.75 gal RO water to dilute to 5.5 gal of around 1.030 wort.
Use either Alt or Kölsch yeast.
If bottling, use heavy bottles for the 4.0 Vol CO2 carbonation level. |

Notes: gA huge yeast starter to make this Saison Dupont culture smash the attenuation and not stall out.
I will also be using my Inkbird controlled fermentation fridge / heater to maintain a hot fermentation.
first two days of fermentation 24C, 30C thereafter until completely attenuated. If yeast stalls I will add dry champagne yeast for a dry finish.
I fermented for around 10 days at 30C
