Notes: Basic Witbier recipe for a "Beer Secret Santa" project. This is a beer I would otherwise never brew and do not drink.
Used ingredients are "on hand" and would have preferred a Noble Hop, though I don't suppose it will matter much (hitting 15IBU with 60min boil). SRM is marginally higher than normal because I don't have enough Pilsner Malt on hand, but this Montana 2-Row is very light.
Efficiency has been inconsistent lately with this new malt, so I may hit this with some Dextrose to adjust - not worried too much about "drying" out the beer too much, OG is already too high for the style.

Mashed in at 0930 @148F, 7 gallons of water, reduced kettle to 45%
rice hulls every 4th scoop into the mash.
Ph taken about 10-15 mins in:
first reading kept climbing from about 5.4 to 5.8 and then up into the 6’s. recalibrated and got 5.38. added a couple hands full of acid - maybe 2.5-3tsp.
-ph meter needs a backup.
recirc slowed a little, adjusted and it picked back up.
about 40 minutes in, raised temp to 149.
about 70 minutes in, raised temp to 150.
at 1 hour, got 1.044, only .3 off target.
about 80 minutes got 1.046, went to mash out. Lifted the malt pipe and vourlauf for about 20 mins.
got 1.052, stirred and prep for sparge.
sparged to 8.2 gallons and cranked up the temp.
:-( only 1.042, lost 0.010 on the sparge. BOO!
boiled to 1.047 & kicked off the hop schedule.
boil was uneventful, went into a 20 minute whirlpool (new riptide pump). Chilled to 90 and t/f to the fermenter. Upon transfer, showed 1.059 @89F
I think the starter worked against me here, after pitching the 1.5L starter (probably not needed) it went from 1.059 to 1.052 - usually I will lose about .003 pitching the starter, so this one appears to have actually fermented down quite a bit.
Pitched about 5PM.
By 3:30 PM, gravity was 1.012. I wasn’t sure the tilt would be sitting in Krausen so I let it run overnight as I still had blow off valve activity.
(fermented with pressure, but lost the pressure gauge, so I had to release the spunding valve to get some blow off).
Gravity on 29 July, 2025 @0900: 1.010

chiller set at 84, but temps hovering around 80F
- chiller problem ! ! ! !
external cooling line circuit (red hose apparently) has a leak, ran out the entire volume of the chiller 2x. Refilled and ran on one circuit.
saw 1.009 on the tilt.
Initial thoughts: I got good aroma and flavor off the hops, and sampling out of the fermenter is relatively clean even in the low 40’s. Left chilling for a couple days to finish out the process a bit and clear. |
