Notes: Infusion Mash at 68 degrees c for 60 mins.
Add Hops and coffee as specified.
Ferment for 2 weeks at 18 degrees c.
Soak 7 grams French Oak chips in one cup Kentucky Bourbon for 2 days.
Soak ground kona coffee in 1 cup boiled, cooled water and leave overnight, covered in refrigerator.
Strain out grounds and add cold coffee and bourbon, with wood chips when kegging.
(have also used Kraken rum and Courvoisier brandy with excellent results).
Condition in keg at 12 degrees c for 2-6 months. |

| Notes: Crystal malt was homemade from Maris Otter. Estimated 30L. As a side note, the kilning process shrinks the kernel enough to need grinding at a different setting than the maris otter it was made from. Chocolate malt was added at the 30 minute mark. I can't tell if it's the chocolate or some of the over roasted parts of the crystal, but it definitely has some burnt toast hints that are very complimentary. Cheers! |

Notes:
Mashed for 60 minutes, boiled for 90, allowed the wort to whirlpool for 15, and finally chilled the batch down to 64F. From there I hit the wort with a good 90 seconds of O2, pitched the yeast, and buttoned-up the fermenter fridge at 63F.
I ramped the temperature up as fermentation progressed until it hit 68F near the end. After 4 days I added the first dry hop addition directly to the primary. I sat on those hops for 3 days before racking to a clean, sanitized, keg to stand in as a secondary. The second dry hops were added, and the keg was kept at 68F for another 7 days before crashing the (secondary) keg, and racking to a clean serving keg. After a week of carbing this up, we were in business. |
