Notes: Mash and boil for 30mins
Add lacto to the grainfather when temp gets to 50degrees
Cover the grainfather with cling film and leave for 3 days.
When PH has dropped down to 3.6ph boil up for 60mins to kill off the lacto and add hops
sanitise the counterflow by running boiling worth through it.
Finish with Lime zest at 5mins.
add to fermenter warm rather than recirculation.
Bleach the shit out of the grainfather
Ferment the beer with cider or champagne yeast
Once fermented out, add cucumber juice to the bottling bucket and bottle. Let it do it's thing in the bottle.
Cucumber has 1.7grams of sugar per 100grams so work that into the priming calculations
Alternatively.
Mash and boil.
Ferment as normal.
Split with half on Watermelon an Mint Half on cucumber
Add Lacto to each fermenter.
Check ph drops then bottle |

Notes: Instructions
1. Start with 2 gallons good clean water
2. Remove 1/2 cup water to compensate for smack pack volume
3. Draw line on jugs at this water level
4. Remove an additional 6.4 cups of water from jug (1514 ml)
5. Add honey to primary
6. Add 1/2 tsp K2CO3
7.Add 1/2 tsp DAP and 1 tsp of Fermaid K
8. Shake with the top on until honey is fully dissolved (use a drill attached degasser if needed)
9. Add yeast at fermentation temp (66-72 F)
10. Add 1/2 tsp DAP and 1 tsp of Fermaid K at 2/3 (1.072) and 1/3 (1.036) sugar breaks
7 days no liquid in airlock
7-21 days liquid in airlock

Notes: This recipe is not quite as dark as a true stout and has a bit more alcohol.
I used two 6.5 containers of PB2, one of which has cocoa powder in addition to the PB.
Original gravity was 1085 at 70 degrees, due to the peanut butter solids in the boiled wort. This is my assumption.
Draining the wort kettle was slow. I had to clear the bazooka screen repeatedly. Lots of the PB stuck to the hops and was left behind in the sieve upon transferring to the fermenter. It was clumpy in the boil.
I prepped the yeast the night before into 2 cups water with a 1/4 cup of DME. I pitched all of it into the fermenter at 1 pm the next day. |

Notes: Lower Protein rest should result in lower head retention. This is planned as it will be highly carbed and may have problems pouring with high head retention.
Higher mash temps to give it a bigger body to balance out the acidity of the blueberries. You can alter the temps to fit the blueberries you can get.
The higher carbonation gave it an almost champagne-like feeling. Very spritzy and delicious. |

Add yeast nutrient with 5 min. Amarillo
Split whirlpool into 3 additions (every 10 min once chilled to 170F), stir vigorously each time.
Split dry hop into 3 additions:
1) 48 hr post pitch (10%)
2) with 1 Plato left to ferment (40%)
3) loose keg hop with clear beer system (50%)
BREW DAY 02-SEP-18:
1st whirlpool started at ~173F (10 min)
2nd addition at ~150F (10 min)
3rd addition at ~143F (10 min)
UPDATE 04-SEP-18:
1 oz of dry hop blend added at 6am, gravity was ~1.030 already!
UPDATE 05-SEP-18:
4 oz dry hop blend added at 6am, fermentation is almost over.
UPDATE 07-SEP-18:
Started cold crashing at 32F, will rack to a keg (on 08-SEP-18) mwith 2.5 oz table sugar and the remaining 5 oz dry hops. Allow to warm to RT and naturally carbonate for a week. pH = 4.35 (racked into keg). |

3 cut and scraped Vanilla Beans soaked in 5oz of Bourbon added at Kegging
Froze 6lbs of Raspberries, brought to room temp and squished in bag then added back to freezer until needed. Get back to room temp and add to completed fermenter for 7 days
Dry hopped right before completion of fermentation for 4 days
0.5oz of El Dorado and Amarillo Keg Hopped
