Boil kettle #1 - 10 gal Mega Pot
Boil kettle #2 - 7 gal stainless steel pot
Additional water was added to the pre-boil pot to compensate for losses in evaporation and absorption. We were shooting for roughly a 6-8% loss in water volume during the boil process.
The cascade hops were added at the 55 minute mark or 5 min boil time instead of 10 min. We wanted to retain more of the hop essential oils and aromas in the wort.
The beer had quite a bit of sediment/trub in the pot as we experienced a few clogged hoses and a clogged pickup tube during the racking process from the boil kettle to the fermenter. Most of the sludge was due to hop material that had absorbed liquid wort. Next time it would be worth the effort to contain the hops in a cheesecloth bag or some type of strainer vessel.
10 gal brew pot #1 had additional water added after the boil to bring up the volume to roughly 5 gal. Not sure why there was a significant difference between pot #1 and pot #2 with regard to water losses during the boil. Perhaps pot #1 had a more vigorous boil.
Post-boil gravity was 1.075 in a 70 degree room.
Racked beer to keg on 1-22-17. Initial tasting was excellent. |

Notes: Last year (2017) I used 40% Vienna and it was tasty. This year (2018) I might go with 25% Munich which will be about the same color and we'll see how the flavor profile turns out.
2018-8-2 tweaked the recipe a bit to match Helles Exportbier for a 2fer.
2019: pils + ~30% munich
2022: 15% munich; going a bit lighter with the munich
72g split between saphir and tettnang turns this into a pilsner! not a bad thing, but altering the recipe to 2g/L instead of 3 and changed to Mittelfruh. also changed munich back to ~30%
2024: did about 12% munich and was more of a pils still. planning on some test batches with 20% munich plus some late hops to get a more malty and hoppy end result and still be helles-like. |

Notes:
Mash 3 lbs of grain in 2 gal of water at 155 for 60 min. Sparge with 1gal at 175 and transfer to bucket. cool to 100F, pitch 1/2 lb of 2 row on surface, place foil on surface of water, cover with lid, wrap with sleeping bag and heating pad, and keep warm for 36 hours.
Transfer back to kettle and boil with DME, fermentables and hops according to above schedule.
Dry hop after 1 week with 6 oz of Jasmine flower.

Notes: The modern recipe according to Bateman's. Removes the black malt from the more traditional recipe and as a result it is much lighter color (EBC 38). Nottingham is not perfect match for their proprietary house yeast, but most similar available profile.
Dialing back the SG a bit to match the 4.8% prescribed by the brewery. Also dialing back the volume to 6 G in fermentor and matching ~40 IBUs. Changing salts and hops to grams.

| Notes: Taking a clone of Cigar Brewing's Jai Alai and turning it into an apple IPA. Not sure if it will work, but it sounds amazingly fun to try. Doing the initial brew at 4 gallons then putting the cooled wort onto the cider in the primary, along with the dry Simcoe hops after a week. |

Notes: 4/11/15 Started with 7 gal of the Howard Family 1030 maple syrup final running, equivalent to 5.5 pounds of the malt, but there was no malt, just the maple syrup dregs from the boiling pan, reduced to about 4.5 gal and then added the 10 pounds of Banyai honey so that final batch was about 5.25 gal 1 tablespoon of yeast energiser
Measured OG was pretty close to the 1120 predicted. |
