Notes: This is intended as a two week beer in the fermenter and over 5%.
Added part of the DME before the boil when I brought the sparge water over. Mixed well and let the grains sit in 2L of water for 10 min and then let drain over the fermenter.
Will add the last 3rd of DME in the last 15 min.
OG 1.042 - Need to up it a bit.
I am thinking to up the base malt (LME) to around 2 kg. depending on my LHBS measures.
The wort tasted sweet with a light sense of corn with a light earthiness from the grains on the tail-end.
The wort tasted the same as before. The fuzziness was slight. the final ABV was 1.012. it needed to be lower will need to up the LME or add a bit of dextrose. |

Notes: Ferment in primary for 7 days, transfer to secondary and follow dry hop schedule. Leave in secondary until fermentation stops, add Gelatin 3 days prior to bottling and cold crash beer to clear up.
Bottle and leave 21 days at room temp to carbonate.
Refrigerate 3 days, enjoy!! This recipe matches the profile of this beer almost dead on..have fun brewing this one. |

Notes: a Session beer... drink a lot
Well, that was the original plan. This beer failed to make it - that is what I get for shipping yeast from California to Georgia in the middle of summer. Smelled amazing and was shaping up to be everything I wanted. Although, at 4.8%, I don't think I would call it a Session Beer. The grain bill was designed to impart as much complexity and flavor into the beer as possible without having a huge alcohol content. |

Ferment at 66 degrees
Raise to 68 for 3 days
Then raise it 1 degree a day until you get to 72. You will reach 72 degrees after one week. However on the 3rd day, at the end of the third day you need to add the dry hops and keep them on the beer for 10 days.
After those 10 days are up. It will have fermented for 14 days (two weeks)and will be ready to be bottled. We shall remove dry hops and auto siphon the bucket using a fine mesh hop bag on it to strain out any trub. Add priming sugar into the bottling bucket and bottle.

This is meant to be a really really HOPPY brown ale. I hate brown ales so I'm hoping this is something more along the lines of DFH's Indian Brown Ale or maybe Grand Teton's Bitch Creek. I've never done a brown before so this will be a learning experience.
Some of the core parts of the grain bill were taken from a podcast on Brown Ales I heard. |
