Notes: a Session beer... drink a lot
Well, that was the original plan. This beer failed to make it - that is what I get for shipping yeast from California to Georgia in the middle of summer. Smelled amazing and was shaping up to be everything I wanted. Although, at 4.8%, I don't think I would call it a Session Beer. The grain bill was designed to impart as much complexity and flavor into the beer as possible without having a huge alcohol content. |

Notes: First attempt at making a double IPA recipe, having never brewed a double IPA before. Worried about the hop additions.
The amounts are almost entirely based on how convenience of the minimum incremental size of grains (0.25kg) and hops (50g) from the shop I use. So I had 100g of the Amarillo and Citra to play with, hence the large additions. Better than letting a few extra grams sitting around. |

Notes: Two packets of S33 a good idea.
Should be fermented at 78-80 degrees for most complex flavors, then allowed to sit on yeast cake in primary for a few weeks for the yeast to clean up. As fermentation winds down, agitate the carboy 3 times a day for 3 days to achieve lowest possible gravity. Let sit in primary for 3-4 weeks total, then keg/bottle and let it condition for 4-8 weeks. |

Ferment at 66 degrees
Raise to 68 for 3 days
Then raise it 1 degree a day until you get to 72. You will reach 72 degrees after one week. However on the 3rd day, at the end of the third day you need to add the dry hops and keep them on the beer for 10 days.
After those 10 days are up. It will have fermented for 14 days (two weeks)and will be ready to be bottled. We shall remove dry hops and auto siphon the bucket using a fine mesh hop bag on it to strain out any trub. Add priming sugar into the bottling bucket and bottle.

This is meant to be a really really HOPPY brown ale. I hate brown ales so I'm hoping this is something more along the lines of DFH's Indian Brown Ale or maybe Grand Teton's Bitch Creek. I've never done a brown before so this will be a learning experience.
Some of the core parts of the grain bill were taken from a podcast on Brown Ales I heard. |

Notes: Brewed 6/20 - 1200ml 1.040 starter. Added half LME pre-boil and other half at 10min. OG was 10.74 pitched started decanted to 800ml at 67. No issues.
6/27 added dry hops. Only had an oz of crystal so I back-filled with magnum and citra. Surprised to find FG was 1.012. No bubbles so it must have just attenuated high due to the huge starter.
Bottled 7/6 used fizz drops. Dry hops ran for 9 days. Tastes just like flat SN Torpedo :) |
