| Notes: Bring 9 qts of water to 173 degrees, then pour over the grains in mash tun. Overall temp should drop to about 154. Stir then let rest for 60 min. With 20 min left, bring 7 qts sparge water to 170 degrees. Drain mash tun then rinse with sparge water, ending with about 3.5 gallons for boil. |

Notes: I only hit 5% ABV with and FG of 1.036. I think fermentation was too warm.
It tastes very good before bottle conditioning. Will be interesting to see how it turns out.
Carbonation on this one failed, I got no carbonation at all. |

Notes: I have NOT brewed this one, I'm entering it to use as my base for my Mexican lager.

boil water to 150 degrees
Take off heat and add grains in bag and steep for 30 minutes.
Remove grains
Back to boil for 60 minutes
Add 1st hops
Cool to about 60 degrees.
Strain if needed when pouring to fermenter.
Add yeast.
Ferment about 58-65 degrees in dark area.
*Yeast claims to not ferment well in low temperatures even though its a lager yeast. Keep under 65 degrees to get lager results though. |

C75 bumped up from 5 oz to 12 oz, just because I have it on hand. (Sp 2015)
Cut out caraRed, bumped up Carafa and chocolate, English choc. added Centennial and modified hop schedule (Sp 2016) changed water chemistry for L.A.
current srm = 18.73 and the end result is a little to dark. Currently 3oz UK choco and 2 oz carafa III. Drop choco to 2 oz. balanced C45 and C75. Modified Hop schedule slightly.
12 Jun 2016: replaced CaraMalt with CaraRed. Going for more red.
Also targeting 48 IBU, I added another hop addition of Cascade and Centennial at 20 min.
30 sep 2016. bumping up grain to 8lb. dropping abv to 5.7%
dropped carafa III from 2 to 1.5 oz.
20 Nov 2016. tasting notes and recipe modifications. Great tasting. Seriously. Consistently very good. Dry with complex maltiness and chocolate. mmm.
Chocolate is what I plan to reduce. 2 oz to 1.5oz. Although, I'm not sure if I used British Choco, which is considerably darker. If I used Am, I shoudl reduce. The choco flavor is nice, but not suble, and the color is just too dark. |

Making a New Mexican version of a killer beer style. How's it New Mexican? I'm using Hatch chiles instead of seranno peppers. Also, because I'm a gringa, am halving the pepper content--I can't take the heat.
Made gluten-free/gluten-removed for the Wife.
Tasting notes, pre-carb (1/10/2015):
- Started off with a lot of coffee taste (maybe too much roasted barley?)
- Not too sweet
- Barely taste any heat from peppers, but it's got a great peppery aroma (and a vanilla & chocolate aroma, too). Get a bit of lingering heat on the lips.
- Had no problem with "chalkiness" due to cocoa powder (something reported by the original recipe's creator)
From the original recipe: "My inspiration for this idea is a Mexican hot chocolate. Sweet chocolate and cinnamon taste with a hint of spiciness from the cayenne. I used bakers chocolate melted in a cup of water in this batch because the first one tasted a bit chalky when i used cocoa powder. i also used Zimbabwe Bird peppers not Seranno but they are close on the Scoville scale."

| Notes: Steep crushed grains in 3 qts of water at 149F for 45 mins. Add water to make 4.5 gallons of wort, add LME and bring to a boil. Boil for 60 mins, adding hops at times indicated. Add LME for last 15 mins of boil. Add Irish Moss for last 15 mins of boil. Cool wort, transfer to fermenter and top up to 5.0 gallons. Aerate wort and pitch yeast. Dry hop for 3-5 days. |
