Notes: Steep grains at 155F for 20 min in 2.5 gallons of water.
Sparge with 1 gallon of 170F water
Bring wort to boil, add 3.3 lbs of wheat LME. bring back to boil.
Add 0.5 oz hallertau hops.
Boil 40 minutes add other 0.5 oz hallertau hops
Boil 5 minutes
ADD REMAINING 3.3 lb LME. This will help maintain SRM.
Boil final 15 minutes.
Flame out and add 0.75 oz of Amarillo hops. After about 5 minutes begin chilling wort. Siphon to fermenter. Collect sample for hydrometer. Add enough water to achieve OG 1046 to 1051.
Aerate wort.
Pitch yeast, secure lid, set airlock and move to temp stable area. After fermentation is complete, move to secondary fermenter or go ahead and bottle.
Prior to bottling, mix 5 oz of priming sugar into 2 cups of boiling water, mix well then add 4 oz of watermelon natural flavoring. Stir to incorporate into the hot liquid. Cool to room temperature. Dump primer and flavoring mix into a clean bottling bucket. Transfer beer from fermenter to bucket and bottle as normal. Bottle condition for at least 2 weeks.

Notes: This is a specialty brew because this brew requires a different step for an IPA that will give this beer a much deeper color. I selected "Belgian Biscuit" above because it is close to the Lovibond (23) and "toasted malt" is not in the drop down menu. You are actually going to roast your own English Pale 2-Row at 350 degrees F for 10-15 minutes, and that isn't in the drop down menu, but will give you 25 Lovibond. Let it cool, then roll a thick glass over the grains to crack the hulls. It can now be steeped.

Ferment for 7 days, transfer to secondary and leave until fermentation stops. Add Gelatin (optional) 3 days before bottling and cold crash in fridge to clear up the beer. Bottle, age 21 days, chill 3 days, enjoy!!

Notes: Directions: Mash the two-row malt, wheat malt, and flaked oats in 5 quarts of water. Hold temperature at 154°F. for 60 minutes. Strain the wort into the brew kettle, then rinse grains with 1 gallon of water at 170°F., collecting run-off in the brew kettle. Mix in liquid malt extract and add clean water to bring boil volume to 3.5 gallons. Bring to a boil, add hops, and boil for 60 minutes. Add the orange peel and coriander in the last 10 minutes of the boil. Chill wort, top off to 5 gallons, and stir to mix and aerate.
