Start primary at 65°F and slow rise to finish at 69°F. Hold for D-Rest and check gravity. If you pitched enough healthy yeast, this beer will finish between 1.012-1.014.
Heavy doses of dry hops can be added all at once or in 2 different additions. 65°F is a good temp to hold during dry hopping. The Citra used in this version, are LUPOMAX from Yakima Valley Hops, which is why the AA% is higher than usual. If you sub out for regular Citra, adjust accordingly for the lower AA%. Also, if you can't get Galaxy, Mosaic is a good alternative.
After 2-4 days of dry hopping, begin crashing the temp over the course of 4-5 days, down to 35° and hold for cold conditioning. I usually do 2-3 yeast/hop dumps over the course of the crash. Gelatin can be used for fining if you like.
This beer has taken gold medals and blue ribbons at many comps in both the American IPA and Double IPA categories. It regularly scores between 40-45 out of 50.
I have very soft, clean water in Salem, Oregon so I run it through a charcoal filter to remove chlorine and then add the small amounts of CaSO4 and CaCl2 in the mash to harden the water & lower the pH, which allows the hops to shine in the finished beer. Adjust accordingly for your water profile.

| Notes: Mash with 5 Gal at 153F for 1 hr, Place in Pot, cover with saran wrap on surface & purge with Co2 and tape lid shut and allow to cool to 110F, then innoculate Mash with 1 lb crushed raw 2-Row, stir, place saran wrap on surface of mash, purge with Co2 and tape lid shut and allow to sour. Use heat belt and blankets to heat at 105F to 110F for 24 hrs, (longer if u want more tart). Place mash in lauter tun and sparge with 6 gallons RO to collect 7.5 gallons, boil 2hrs til 5.5 gallons. Add brown sugar and 5gm Yeast Neut to boil. Use big starter of Roselare Blend (and lambic blend etc)or Use SA-5 for non Brett Brew. Ferment at 68-70F. Secondary then place 2 batches in 10 Gallon Rum Barrel x 6 to 12 months. When bottling with the Brett use 1/2 usual bottling sugar. SA-5 use standard bottling sugar amounts. |

Ingredients
5 lbs. (2.3 kg) 2-row pale malt
2 lbs. (0.9 kg) rice syrup solids
2 AAU Domestic Hallertau hops (60 mins) (0.5 oz./14 g at 3.9% alpha acids)
2 AAU Domestic Hallertau (20 mins) (0.5 oz./14 g at 3.9% alpha acids)
White Labs WLP840 (American Pilsner) yeast
Step by Step
This is a step infusion mash. Target your water profile to be very soft water similar to Pilsen (~25 ppm HCO3-), utilize a larger portion RO or distilled water if your tap water is hard. Mix 7 qts. (6.6 L) strike water with the crushed grain to achieve a starting mash temp of 145 °F (63 °C) and hold for 120 mins. Raise mash temperature to 158 °F (70 °C) and hold for 10 mins. Raise mash temp to mash out at 168 °F (76 °C) and hold for 5 mins. Batch sparge with 170 °F (77 °C) water. Boil for 60 minutes, adding the hops as instructed. Target pitching rate at 2.0 million cells/ milliliter/degrees Plato (~2 L starter). Ferment at 52 °F (11 °C) for 3 weeks. Lager for 6 weeks at 32 °F (0 °C)
Extract option:
For extract, replace the 2-row with 2.5 lbs. (1.13 kg) light dry malt extract or 3 lbs. (1.4 kg) light liquid malt extract. Add extract and bring to a boil. Follow remainder of instructions for the all-grain version. |
