| Notes: Instead of a 5 gallon batch I decided to go with an 8 gal. batch only because I upped the grain bill by about 3 lbs. I brewed this in a 5 gallon batch before as per http://www.homebrewtalk.com/members/Battery_Brewer and it turned out excellent. Also I'm using 2 smack packs of Wyeast 1056, only because I'm being lazy and not making a starter. I also topped off with tap water to give me a 10 gallon batch. |

Beer Bug did not work.
It appears that the vent was not totally sealed.
This beer was terrible and was thrown out. I believe the yeast is what gave it such a sour flavor
♦ STANDARD BREWING NOTES:
♫Create 8 gallons sparge water. Bring to 154° strike temperature. Prime pump. Pump water through hose. Add tablespoon 5.2 pH balancer
♫Add 2 drops Fermcap before adding grain.
♫Add grain – Sparge at 154° for 90 minutes (Minimum 60) (One gallon loss during sparge process) Water burn rate: 1-1/2 gallon per hour.
♫Boil clean water for end of boil session adjustment. Adjust to 5.5 water line.
•Dark beers – Add x tablespoon Calcium Carbonate
•IPA beers – Add 5 tablespoon Gypsum for IPA
WAKE UP!!!!!!
15 minutes – Add immersion chiller
15 minutes - Add Whirlfloc
10 minutes – Add 1 teaspoon Yeast Nutrient last

Reclamation Red Recipe Beer&Brewing

As a follow up to “Barrel Aging for Homebrewers,” Neil Fisher has shared the recipes for some of the base beers that he uses for barrel aging. The recipe for “Reclamation Red” has undergone several different iterations, but it started out as an attempt to brew a barrel-aged version of Stone’s Arrogant Bastard. The recipe, modified for significantly lower IBUs, has become his house Burgundy Sour recipe and is a great backdrop for aging with a wide variety of fruits. Reclamation Red took two medals at the 2014 Big Beers Festival homebrew competition in Vail, Colorado. The nectarine version took Silver in the Sour Category as a Flanders Red entry, and the blackberry version took Bronze in the Belgian Specialty category.

Notes: 14th April 2015 - Mashed at 65oC. Aimed for mash pH of 5.2 (predicted) using:
Lactic Acid (88%): 5.3 mL added to strike water.
23L at 1.035.
pH adjusted to 4.6 after running off to kettle. Bubbled CO2 through the wort to remove oxygen and then wrapped the surface with plastic wrap to avoid oxygen in headspace. Incubated for 10 days between 35-48oC till pH had dropped to 3.3. Added grain 3 times as seemed to stall at pH 4 for quite some time.
24th April 2015 - Boiled, chilled and fermented at 24oC with a brett / sacc starter from 2 bottles of Vieille Ville. 19L at 1.032. Some fermentation of sugars from lactic acid bacteria had reduced preboil gravity to 1.029...
Fri 15th May - Dry hopped with 42g Mosaic
Mon 18th May - Gelatine added to primary and fermentor cold crashed in a fridge set to -1oC.
Tues 19th May - Kegged and pressure set to 1 bar. FG 1.004 so 3.5% ABV.
Tastes great. Nice lactic tang, very drinkable. No apparent Brett character but could be over powered by the acid. No off flavors detected. Ever so slight "grainy" aftertaste that I get in a lot of berliner weisses. Not sure what it is, but at a much lower level than a lot of commercial examples. |

Before bottling the taste was right where you would want it for a blonde. I am just hoping both the malt and bitterness mellow a little bit and just flow together. Im pretty excited. I am going to try in July to do this same recipe but All Grain. |
