Pineapple, citrus and papaya; single-hopped with Simcoe, Hoppy Christmas is an anti-festive IPA, redolent with summery flavours. Small caramel malt additions provide a touch of malt complexity. Simcoe, arguably our favourite hop, carries this beer - pine, tropical fruit and bitterness are its specialities. Get the freshest Simcoe for the best profile.

0.5 teaspoons ground cinnamon

Notes: This recipe turned out AMAZING!!! So, I got frozen berries from Trader Joe's and they were added in secondary but smashing them up first with a potato masher in a bowl with very little water and the malt extract dissolved. They malt extract was added as a afterthought as I did not get great efficiency and figured the water content from the berries would dilute the beer's ABV and body, but next time it will be excluded. Also the strawberries completely overshadowed the kiwis and the kiwis were a bitch to peel so next time they will be excluded as well. And careful with the yeast cause I got too much clove and no banana, I'll probably use a smaller starter and higher fermentation temp next time.
It is the perfect beer to give those anti-beer women who you are trying to get drunk and into their pants, hence the name- although it has multiple meanings. |

Notes: Yeast cultured from handbrygetts norwegian wood. ( I suspect I used safale us05 dry yeast with no noticible difference
All water is made into a tea from boiling juniper twigs torn up. as per http://www.garshol.priv.no/blog/324.html

I would not make this again, and use the normal recipe, non 1kg version |

Notes: Second try at a GF Berliner. The first try was very good but sourced a liquid Brett culture that was grown on barley malt media. Trying a version without that strain. Also added Quinoa thanks to some feedback from Groundbreaker Head brewer, Tyler Kueber.
Will flavor in the glass with Amoretti Grapefruit Flavor Compound to taste. |

Then added the Carapils and a little more Choc and Crystal to make it more porter-like.
Added some malto to add body.
Not doing the late addition so the beer will be darker in color.

Notes: Mash Schedule:
*Dough in to start the mash at 52°C
*Leave for 10 minutes
*Remove approximately 30% of the mash and put in a large saucepan
*Add 30g of Styrian Golding hops
*Heat to 60°C and hold for 1-2 minutes
*Bring to a boil and leave for 20 minutes
*Return the boiled decoction to the main mash and stir
*Mash temp should now be 63°C (approx)
*Leave for 45 minutes
*Sparge with near boiling water (95°C)to collect 27lts in the boiler
*Adjust wort pH in the boiler using 80% Lactic Acid, before heating, to a pH of 4.4
*Heat until bubbles appear
*Chill to 20°C
*Pitch yeast and house culture
Extra Cultures Being Added:
*Vicaris - Triple/Geuze
*Odell - 5 Barrel Pale Ale
*Siren Craft Brewery - Gouttière Saison
*Wild Beer - Solera Aged Beer
The idea of brewing this again is due to the fact I won second place with the previous incarnation. I now need to see if I can produce the same or a very similar beer.
The house blend has been added to so I am pretty sure that the profile of the final beer will change even though I am doing everything to do with malt, hops and brewing yeast the same as before.
Wish me luck! |
