This makes a tasty pale ale with a nice zesty grapefruit kick upfront from the hops that then leaves with a light,but slightly spicy, after taste from the rye grain.Great summer time beer for us in the hot South ! |

5/11/18: After 14 hours, chilled to 69 degrees -- pitched yeast slurry of Wyeast Belgian Saison 3724, slurry of Omega Saisonstein, yeast cultured from Crooked Stave's Hop Savant All Brett IPA, and 3/5 pack of Wyeast Brett Brux.
5/20/18: SG: 1.009 Airlock no longer bubbling but bubbles still rising in beer.

Replaced Bullion with Challenger for the 60 minute hops. I have seen the Avery offering as having 17 IBU, Mine is just a tick above that .
Also, this is scaled down to a 2.75 gallon batch.
Going to try priming it to a bit les than 2 vols. Try to keep it a touch malty and stay away from the metallic-y taste.... |

Notes: From Avery Brewing Co:
This beautiful, deep russet brew is dominated by a chocolate and brown sugar maltiness with hints of vanilla and nuts, producing a very smooth, well-balanced, and quaffable brown ale. Originally named Elle's Brown Ale after Adam Avery's beloved chocolate lab, however one Cease and Desist letter from a certain fashion publication later, this classic American Brown Ale was renamed as Ellie. Elle didn't mind. Ellie's Brown Ale has all the characteristics of its namesake; friendly, mellow, and a little nutty. As Adam's best friend, she came with him to work everyday and was a steadfast companion for all his climbing adventures. Elle is missed, but she lives on in this beer as the mascot on the label. |
