Notes: 1. Mill your adjunct to the same degree of fineness as you mill the malted barley for your main mash, or slightly finer.
2. Add 1.25 of Crushed 6-row to 3 pounds of raw wheat
3. Add 10.5 quarts and heat to 156 and dough in until you hit the starch gelatinization temperature of 136-147. Hold the cereal mash at this temperature for about 20 minutes.
4. After the 20 -minute rest, slowly heat the cereal mash to boiling, and allow it to boil for 30 minutes, just as if you were making oatmeal. Be sure to stir frequently to prevent scorching. This would be a good time to start heating the strike water for your main mash.

5. Once the 30-boil is complete, the starches are fully gelatinized and ready to be converted by the enzymes in the main mash.

Carared for Caramalt (store didn't have)
About 3x amount of bittering hops (at 60m and 30m)
Brewing day: 18th March 2017
draining without sediment: 17l (otherwise 19l - could've drained a wee more). !First bucket leakage-->filled over after 2 hours. Considerable amount of yeast loss.
Bottling day: 2nd April 2017 with 90 g white sugar
Dry hopping: 25th March 2017 (gravity: 1.016)
Pellets spread over wort w/o bags after 7 days of primary fermentation. Prim. fermentation continues for another week in the same bucket.

Notes: First attempt at proper Bavarian style Pils
Follow the fast lager method
fine with polyclar in CC for 3 days before bottling
Somehow ended up doing a 120 min mash , steps were close but not ideal
expecting a very low finishing beer due to highly fermentable wort
the Munich was well over a year old but seems to have converted just fine
EDIT * maybe the old malt didn't convert well , left a slightly sweet honey type finish and FG was 2 points higher than exp.
needs more head retention as well , 250 g of carapils should have taken care of that , suggest re brew with fresh ingredients and slightly more carapils |
