Notes from recipe formulation:
- This will need a yeast starter even though it is a half batch because it's such a big beer.
- I doubt they have whole styrian golding hops but I'm afraid of the effect of using the pellets for dry hopping, it seems impossible to filter well enough, it will get into the final beer. Maybe cold crashing before bottling could help.
- I am upping my efficiency to 65%. I've gotten that only twice but I don't want to distort the recipe too much from the original, especially for this big of a beer. I will just... try to do a good job.
- The recipe says to let the beer rise up to 70 fermentation temp after 3 days. |

Notes: Mill the grains and mash at 154°F (68°C) for 60 minutes. Vorlauf until runnings are clear, then run off into the kettle with first-wort hops. Sparge and top up as necessary to obtain about 6.5 gallons (25 liters)—or more, depending on your evaporation rate. Boil for 60 minutes, adding hops at flameout. Whirlpool for 15 minutes, then rest 10 minutes. Chill to 66°F (19°C), aerate well, and pitch plenty of healthy yeast. Ferment at 68°F (20°C) for 2–3 weeks or until terminal gravity is reached. Add dry hops. After 3 days, cold-crash, package, and carbonate. |

Notes: This recipe is using the thin mash (2qt/lb) (9.75gal) and minimal sparge (3gal) method. Standard base malt and roasted barley make up the bulk of the recipe with DME and molasses added to the boil to keep volumes within max mashtun while increasing the OG to within style guidelines. Molasses may not be traditional but we think it will add an interesting note while helping to achieve the style color. Use of EKG gets us to the low IBUs that the guidelines recommend. Using 1.5million cells/plato/ml calls for 8 packages of yeast to ferment this wort. We are also fermenting 5 degrees colder than the lowest optimum temperature recommended. Oxygen will be provided to maintain yeast health. Gypsum and CaCl is added to achieve the target water profile of Edinburgh. Lactic acid is added to achieve a target mash ph of 5.4. |
