you can brew this just like the recipe and get a good high alcohol bitter IIpa or can cut it down a bit by omitting the corn sugar and change the 90 bitters to 60 reducing the bitterness a bunch, either way its fantastic. Dry hopping goes as follows first batch for 5 to 7 days then pull out and add the second batch for 4 to 5 days, I dry hop the second batch in my keg in a bag under co2, at the end of dry hopping I cold crash in the freezer to drop all particles to the bottom then pull the finished beer off the top and carbonate, you will love this beer
if you cant get WLP007 just use nottingham, works great at 60f for this beer |

Notes: Other people's session IPAs are either too wimpy, too cat-urine-ey, soapy, over-aged (I like 'em fresh), or just plain gross. This is a fine, bog-standard IPA, with few frills. I like to change the hop varietals around, but I generally stick to one all around hop, just to showcase that. Adding the hops in the last ten minutes gives it an amazing flavour and a different bittering tone than a full 60 minute hop boil, at the cost of using a boat-load of messy hop pellets. I strain them out with a funnel and a women's stocking. Cheap and effective.
And yes, I consider 7.64% ABV sessionable, thirst-quenching, and whatever pretentious adjectives apply. It's all about 2 things with me, effectiveness and flavor. 7.64 is definitely an effective brew, and it ages fast enough in a kegging system that by the time it's just right for drinking, the hops have hit their peak balance, and will stay that way for a couple more weeks. With a bottling setup, you'd have to lose a pound of malt extract, and settle for a wimpier brew to get the freshness ratio about right.
And don't worry about that crazy looking IBU ratio. Even my wife likes this batch, and she's not a fan of overly bitter IPAs |

Notes: 1. Add 4 gallons distilled water to brew pot.
2. Bring water to 156 and add oats and corn
3. Steep for 15mins then rinse with cold water to achieve 7gals
4. Add 7 lb sorghum extract and candy syrup.
5. Bring to a boil. Stir to prevent scorching.
6. Place bitter hops in large tea ball (don’t compress). Add to brew pot when mix boils. Boil for 45 minutes.
4. At 40mins add Mt Hood hops.
5. At flame out add honey and aromatics.
6. After chilling wort to 75 pour into primary fermentor and let sit for 2 weeks at 64-70.
7. Strain and rack into secondary fermentor and let claify for a week.
8. Bottle.

| Notes: 2nd time brewing. First time was really good and cleared nicely. Really close top original Yellow Rose in side by side comparison. However efficiency was low (13 lbs of Pilsner ground at Homebrew party) and ended up with about 1.052 OG. Beer was a little on the plain side. Used Belgian pilsner this time and set new mill to 0.045" gap. Hit OG right on target. chilled to 75 and put in chamber. Pitched at 69°F after a couple of hours, in the afternoon. Bubbling and 1/2" krausen by next morning |
