| Notes: I bottle-conditioned this brew for a minimum of 6 weeks at 70F. I put the bottles in the refrigerator at 40F. The longer they sat, the better the beer tasted. The final beer was 18 months old and was delicious, warm, and complex. |

Notes: - Mash water does not need acid, acid level low pH due to high
roasted malts.
- Late additions - Brown Malt (5lb) , 2-row Toasted (5lb)
into Mash near end, to reduce acid levels from high roast malt
adjunct.
- Late additions resulted in a stuck mash. The beer was "green" for a while. I let it age 18 months in kegs then bottled with priming sugars.
It went from burnt and undrinkable, to sweet and roasty.
This beer found its place in time, but needed a lot of it to recover.
I would suggest steeping the late additions separately and adding after the fact.

Brewed exclusively for the German market, this Hello My Name brew features a twist of flavour inspired by Germany. Morello Cherries are the go to cherry variety for this beer (and Krieks), the sour compliments the residual sweetness of the malt. Works well if you reduce your IBU to the 20 to 30 range too.
