Start cool at about 50°F (10°C), and hold there for the first forty-eight hours.
For every day thereafter, increase your temperature by 1°F (about 0.5°C) for ten days. After it’s been in the fermentor for twelve days, it should be at a steady 60°F (15.5°C).
***Free rise to 72F max?***
Activity in the airlock should be low (but not absent). At that point, I let that sucker free rise to the warmest temperature I can find in my brewery. Why? To ensure that my yeast goes back and does a healthy diacetyl cleanup and scrounges up all remaining fermentable sugars.
I give the beer an additional nine days (now we’re at three weeks in the fermentor), then cold-crash to near-freezing to begin the clearing process. What remains should be a fully attenuated, malt-complex, fairly bitter, drinkable dry beer. All it needs now is carbonation and time.
Whether you bottle condition or keg, there’s no need to leave this beer in the fermentor while it conditions. |

Notes: The pumpkin was actually butternut squash that was prepared prior to the brewing. Four squashes were halved, de-seeded, coated in brown sugar, and baked in an oven at 375F for 2.5 hours. After allowing the halves to cool the skin was removed and the squash was cut into approximately 1"x1" cubes. These cubes were then added to the boil kettle in a mesh bag right before the start of the boil.
This batch was produced using a 'semi-decoction'- The mash temperature was a little low (142F) so after 45 minutes in the mash tun about 25% of grain was taken out and heated to 165F. This brought the mash temperature up to 144F. so after 15 more minutes about 33% was taken out of the tun and heated to 175F. When replaced into the tun the mash temperature increased to 148F. After fifteen minutes the mash was sparged with sparge water at 175F. The total mash time was about 90 minutes with two 'decoctions' during this period.

Notes: Add extract to 3 gal cold water (easier to dissolve). Start with 30 minute mash at 155F of the flaked oats and wheat in grain muslin bag, followed by 10 minutes of heating at 170F before removing the grains.
Simple Boil with only one hop addition at 60 minutes.
Whirlpool for 40 minutes following heat off, with 3 hop additions during.
Dry hop twice, once after 6 days and again after another 4 days (10 days after brew day)
