| Notes: Heavy citrus notes with slight vanilla. Creamy and full bodied from the oats. Great blend that closely resembles orange juice, just not as acidic. Keg tapped within one hour at a friends house. Will be brewing this exact same recipe again, and again, and again. |

Notes: Ferment @ 67°F (19°C) for first 3 days, allow to free rise to 70°F (21°C) on day 4 and finish fermentation. Dry hop for 2 days when FG is reached, typically 1.009–1.012 (2.3–3°P). On the 2nd day post dry hop, dump trub. On the 3rd day, drop temp to 55°F (13°C) and add gelatin, Crash 24 hours later. Final pH should be 4.6–4.7, adjust as needed.

Notes: The brewing process seems to be essentially the same for everyone. Most do a simple infusion mash, but some do a two-step mash where hot liquid is added half-way through the mash. The mash is then lautered through juniper branches, and sometimes straw. The hops are boiled in water to make hop tea, but people added it at different times. Some poured it into the mash, while others added it to taste after fermentation. Nobody boils the wort.
Everyone seems to have used juniper in the strainer, and many also made juniper infusion for the mashing. Aarne Trei was the only one who didn't use juniper, but even he said that his uncle used to use it. So clearly juniper has been used by very nearly every single brewer.
Hops have been very sparingly used. I only have hard numbers from three brewers, and they used 0.54, 0.83, and 2.7 grams of hops per liter of finished beer. And the beer definitely has barely any hop character at all. The IBU will probably be around 5-10, generally. |

Notes: The following adjustments were made:
1) Rest Temp is increased to increase FG to compensate for the drop in FG with barrel aging, and pulling ethanol from barrels into the beer.
2) Took out aroma hops in late boil to avoid hop degradation during barrel aging. Also increased bittering hop at 60 min to account for loss of IBU from elimination of late hop addition, as well as iso-alpha acid loss during barrel aging.
3) Added the fermentation temperature at the lower end of the recommended range (we forgot to do it for a higher gravity beer, as would be normally done, in the original recipe).
4) We will dry hop after barrel aging as would traditionally done for a non-barrel aged beer.
5) A rye barrel will be used to get some spiciness from rye whiskey to compliment the fruity character from dry hopped mosaic hops. The barrel aging will also some vanilla character.
