Notes: Possibly start fermenting at 64* and slowly raise to 71*?
Make a yeast starter. I made a 5L starter with the smack pack. Chilled then decanted off the spent wort. Made a new 10L starter and added that new wort to the previous 5L starter. After another 24hrs I chilled the 10L starter and let it crash till brew day. Then I decanted off about 2/3rds of the 10L starter and pitched about 1L of yeast alone with the remaining wort. It went from 1.058 to 1.016 in two days. After 5 days I start to cold crash when gravity was about 1.012-1.013 |

Notes: Start heating strike water 0630
Mash in 0710 154 F --> 150 f ---> 152f
Mash out 168F @ 8:25 to 8:40
Start ramp to boil at 8:40, pull grain basket and start sparging
Sparging with 165f water approx 4 gallons to 7.2 gallons, 20 min sparge
Boiling at 9:13 (used Hot Rod heat stick to help after sparging)
Hot break at 9:15
Drop in 1 whirlfloc tab at 10:10, then Sterilize chiller to 10:20
Start chilling with groundwater at 10:30 down to about 135 f while recirculating back into Grainfather
Chill with ice water from cooler until 72f.
5.9 gallons 72f wort directly into Big Mouth Bubbler fermenter at 1140 and insert Immersion Pro in lid (sanitized with Iodophor)
Pitched at Noon, 2 packs of WLP 090, wort approx 71.5
Minimal little bubbles on surface at 6:30PM
Bubbling away and Krausen forming at 9 PM
22 Jul, 1230 PM bubbling slowed to 1 bubble / 10 sec. Took reading, 1.030SG / 7.8 Brix with refractometer. Corrected with online calculator to 1.013 SG and 3.59 Brix WRI. 6.05% ABV. Almost there. Roused yeast at this point, and again on morning of 23 July.
Added Dry hops Sunday 22 Jul. Plan to take final reading on 24 July and cold crash to 26 July, then keg and add Gelatin on 27 July, burst to 30 PSI for one day, reduce pressure and be ready to serve late on 28 July.
