18 g whirlfloc G 15 min before end of boil
1 g zinc 15 min before end of boil
Important Whirlpool hops notes:
add "210 F" whirlpool hops at flameout and whirlpool for 5 min, then let rest 15 min. Then recirc through the HX back to the kettle to drop temp to 170 F. Then add "170 F" whirlpool hops and whirlpool for 5 min. Then let rest 15 min. Then knockout through HX to FV.
add 02 through carb stone at low flow rate (3 L/min or less) for 1 min
pitch entire container of US-05 harvested 1/24 from cold box. Set temp control to 68F. Pitch between 65F and 68F
-at 4-5 plato, set temp to 75F
-at 3 to 3.5 plato cap FV blow-off
-when terminal gravity is reached for 2 consecutive days, perform diacetyl test and off flavor (acetaldehyde, etc.) etc evaluation and if pass, soft crash to 60F for 1 day.
-harvest yeast if desired, or dumb trub
-add 4 day dry hops. rouse once per day
-after 3 days, perform diacetyl test and off flavor (acetaldehyde, etc.) etc evaluation and if pass, crash to 35F for 1 day.
-dump trub, add 500 ml biofine and 20 g antiox C per 6 bbl
-condition until bright and no hop burn

Notes: Dropped a tea spoon of slurry of kveik from a previous batch into 34C Wort - Fermentation kicked off in less than 2 hours.
After 12 hours I noticed the spunding valve had opened up at around 15PSI - I dropped it off down to around 8-10psi for the rest of fermentation.
After about 36hours fermentation had started to slow - I dry hopped my first dry hop here and let fermentation finish. - Finished around 48 - 60 hours - Left it for another day before cold crashing for 2 days.
Close loop transfered into a keg that had been purged and had 2nd dry hop bag already suspended.
Carbed at 30psi for 2 days and dropped it down to serving pressure. |
