Notes: Heat Strike Water. Once at temp, add grains.
Heat the lauter water.
Stir every 15-20 minutes.
Heat sparge/lauter water.
Raise the temperature to mash out at 170 °F (77 °C).
Vorlauf off very slowly and recirculate back into mash tun until wort clears.
Once clear, begin fly sparge (adjust if not fly sparging)
Collected wort should be pre-boil kettle volume of 6.5 gallons (24.6 L).
Add water agents and .25oz Motueka hops
Boil for 60 mins.
At 20 mins, add .25oz Sorachi Ace and .25oz Motueka hops
At 15 minutes add yeast nutrients and irish moss
At 7 mins, add .25oz Sorachi Ace hops.
Turn heat off at end of boil.
Chill and filter while moving to primary fermenter
Aerate, preferably with oxygen directly for 60 seconds.
Pitch yeast.
After fermenting for 14 days, take fermenting wort off dead yeast, racking to secondary vessel.
Add dry hops and let sit for another 14 days.
Bottle and condition or keg. |

Notes: Wash and cook the rice. Use shortgrain.
Heat water to 67C before adding the grain and slowly mix in the rice until no longer clumped together. Mash at 65C for 60 mins from start to finish. If sparging, make sure the water temp is close to 65C to ensure there is no burnt flavour.
Do the boil for 60 mins. Near the end of boil (10 mins before) add a half teaspoon of yeast nutrient. Cool wort immediately and try to get it as low as 18C before transferring the wort to a fermenter.
The recommendation for Novalager pitching is to pitch dry while the wort is being transferred, to ensure it is mixed in and oxigenated.
Novalager can be fermented at lower (12 Celcius) or higher (18-20C) temperatures. It should ferment quickly at 18 degrees, thus the choice to do that here.
If everything goes well, the beer should ferment fairly dry. When I did this recipe, my starting gravity was fairly high, so it finished higher at 1.016. It still tasted much like Sapporo. Cheers (or kampai!) |

Ingredients:
2.5 gal Tap Water
4 Gallons Bottled Water – Note: even though this is a 5.5 gallon recipe, you will need extra water because of the fluid loss during the boil process
1lb German Pilsner
1lb Belgian Munich
6lbs Pilsen Malt Syrup
1oz Saaz Hops
1oz German Perle Hops
2 Saflager S-23 Lager Yeast
Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grains for 30 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs Pilsen Malt Syrup and return wort to boil
Add .5oz Saaz hops and .5oz German Perle Hops and boil for 60 minutes
Add .5oz Saaz hops and .5oz German Perle Hops and boil for 30 minutes
Cool wort to 70 degrees
Add enough bottled water to bring the specific gravity to 1.046
Add 2 packs Saflager S-23 Lager Yeast
Fermentation:
Primary – 2 weeks at 64-70 degrees
Secondary – 2 weeks at 50-54 degrees
Secondary – 2 weeks at 44-48 degrees
Bottling:
6 weeks after brew date
Use .25oz of corn sugar per gallon of beer
Condition beer for 4 weeks at room temperature
